First a scoop of vanilla ice cream is coated with special ingredients and frozen until very hard. The next step is to deep fry a flour tortilla and form it into a e shape. Then the inside of the tortilla is sprinkled with cinnamon and brown sugar. After the tortilla is prepared, the ice cream ball is dipped into the deep fryer for approximately 30 seconds. This turns the coating into a uniformly solid shell, explained Mallon. Because the ice cream is frozen solid and coated, it does not turn into a puddle as one young customer predicted. The fried ice cream is placed in the center of the shell and covered with honey.
