The bride graduated from Redford High School in Detroit. The bridegroom is a Davis High graduate and is attending Brigham Young University in Provo majoring in geology. He filled an LDS mission to Chile. THE BRIDE is currently employed with Universal Credit Union in Provo, np -Ce- rtainly fa- mous hotels in the world, and probably one of the most luxurious, the Dorchester on Park Lane in Mayfair will celebrate its 50th anniversary this year. One of the present-da- y treasures at the hotel is young and handsome Anton Mosimann, maitre chef de cuisine. Born and educated in Switzerland, he won his Diploma de Cuisinier at the age of 17, at the age of 25 he won his Chef de Cuisine diploma, the youngest person ever to do so. For two consecutive years, 1978 and 1979, he led the Dorchester to success in the Culinary Olympics in Germany: the Grand Prix Gold Medal, a silver trophy for the Prix dHonneur and individual gold medals. They also won five gold medals at the Salon Culinare in Basle. Mosimann put his best recipes, created not only at the Dorchester but at famous hotels in Switzerland, Italy and Canada, in a book, "Cuisine a la Carte. It was published by North-woo- d Publications, 20 Soho Square, London W.l. It will be available in better bookstores in the United States, he said. There are some of his most famous creations: SUPREME DE CANARD AU POIVRE VERT (Breast of Duck with Green Peppercorn Sauce) 4 breasts of duck, about 5 ozs. each oz. sugar 3 ft ozs. white wine 1 2 1 apples oz. green pepper- 8 bain-mar- ozs. small carrots courgettes (a type of squash) small zucchini Salt, freshly ground pepper 1 tbsp. butter 4 ozs. ft cup watercress It is important that the vegetables be allowed to cool In their own water after blanching. The water must be cooled on ice. Only in this way is the individual taste of each vegetable brought out All the vegetables must be crisp al dente. Grill duck breasts until they are pink. Color the sugar lightly in a pan, add white wine, little by little, slowly and carefully. (Adding cold liquid to hot sugar all at once can create an explosive condition.) Peel apples, cut in wedges, cook in the sugar and wine until soft. on hot plates, arrange apples on top of the duck, pour juice around them. Brown the butter, add green peppercorns and pour over all. Liquidize the fresh tomatoes and add to the above mixture with the vinegar. Add the olive oil very gradually, whisking it in with a wire whisk. Season with salt and pepper and, if necessary, a little sugar and lemon juice. Strain. Divide the sauce between places and place a slice of terrine in the sauce. Then cook the bottoms in more salted water until crisp-tende- ie TOMATO VINAIGRETTE ' 4 tomatoes, blanched and peeled 3 ozs. wine vinegar ft cup olive oil 7 ozs. tomato puree 9 ozs. chicken stock puree corns 2 ozs. duck juice 1 oz. butter poach for about 35 minutes in a in a moderate oven at 250 degrees. Allow to cool and cut into 10 slices. Arrange on Tomato Vinaigrette and garnish with tomato quarters and green beans broccoli 16 ozs. The children of Amy From Houston. Good taste treasured at the Dorchester By JEANNETTE Open House On 90th Anniversary Mr. Daly started with the department in July 1965 when the Kaysville Fire Dept, had only one small pumper and a little white panel truck. This was housed in the small building which later became the LeConte Stewart Galley of Art. He has seen the department grown in manpower and the obtaining of the latest fire equipment and trucks. HE HAS been employed j with Utah Power and Light since 1953. He served ten years with the Kaysville Jaycees and 12 years on the city planning commission. Jim Dotson. Kaysville lire chief, has nothing but admiration and praise for men like "Vic" who donate their time and sometimes their lives for the help and safety of others.
