Beat in the eggs, one at a time, then the vanilla extract, baking powder and salt. Finally, beat in the flour, adding cup at a time and beating until it is incorporated. Divide the dough into two, and place each half on a large piece of plastic wrap. Use the wrap to press each piece of sticky dough into a flat, round disk. Wrap the dough well, and chill it for one hour or up to overnight, until it is cold and firm. Preheat the oven to 375 F Line several sturdy shiny metal baking sheets with baking parchment (for the g cookie shapes), or coat them with nonstick cooking spray, or grease them lightly. Set aside. Remove one piece of dough from the refrigerator, and coat all the surfaces with flour. Tap the dough with the side of a rolling pin to soften it slightly; then roll it out on a floured surface to a little more than h thick, turning it over occasionally to make sure it is not sticking. (If the dough has been refrigerated for longer than one hour, it may be too stiff to roll or it may crack a lot at the edges when it is rolled. Let it rest at room temperature for a few minutes to warm it slightly; then roll it out.) Brush any excess flour off the top of the dough. Use cookie cutters (your choice of Hanukkah designs, or others) to press out shapes in the dough, keeping the shapes very close together to minimize scraps. Use a large metal spatula or dough scraper to transfer the cookies to the prepared baking sheets, keeping them at least inch apart. Gently collect all scraps into a ball without too much handling, and reroll and cut the dough using less flour than the first time. If the dough becomes too soft to handle, chill it again. (For tender cookies, try not to reroll scraps too many times.) If sprinkles or colored sugar is desired as a decoration on the cookies, use a small spoon to put a little topping on each cookie so it looks attractive. Try not to get any topping on the baking sheet, or it may stick (not a problem with parchment). Don't worry about the topping staying on the cookie; during baking, it should soften and stick to the cookie. Bake the cookies at 375 F for about seven to 0 minutes (depending on the exact thickness of the dough and the size of the cookies), or until they are lightly browned at the edges. Cool on the baking sheets for two minutes, then use a clean metal spatula to transfer the shapes to wire racks to cool completely. (While the first batch is baking, roll and cut the second half of the dough, and proceed as above. Be sure to let the baking sheet cool before using it a second time.) When the cookies are completely cool, store them in an airtight container at room temperature for several days, or freeze them for longer storage.
