Show Noritas Nook Mountainman shares natural food recipes By Norita Lancaster weeds, iawnmowers, bathing beauties and sunburn. There is also that uncontrollable urge to grab a picnic basket and seek refuge in the mountains, escaping the hustle and bustle of civilization. In the cities and towns, life goes on as usual, exchanging frostbite for sunburn, indoor chores for gardening, fence mending, lots of barbeques and other summer activities, while high in the mountains the world is coming to life in other ways after winters dormant sleep that was interupted only occasionally by the sounds of snowmobiles. The streams are alive with fish, beckoning to the fisherman, promising a relaxing day away from everyday responsibilities. Wild Flowers and trees are blossoming forth in silent song, small animals can be seen scurrying from place to place, as high in the trees, one can hear the constant hum of bees and the chattering of birds, giving vent to the poets and artist's creative touch. Except for the sounds of nature's creatures as their natural habitat is invaded by intruders; fishermen, and sight-seer- s campers, there is a peaceful quiet where one can commune with God. Lucky are those who have cabins in the mountains that surround Sanpete, lor they can enjoy the sights and sounds of the wilderness all year long, but for most of us, an occasional trip to the mountains can only be a refreshing interlude. Don't desecrate them so that they can continue to be enjoyed for hundreds of years longer. This week's very talented cook is Chad Nielson, a young, interesting bachelor and modern day hermit. He lives in a mobile home on top of a mountain about 9000 feet up and about 2 miles west of Skyline Drive in a place called Sportshaven, at Mountainville. His regular profession is that of a coal miner. However he really is a jack-of- all trades. He is also a certified EMT. Chad is a deep thinker, enjoys strange and unusual facts and loves to read. He is a very talented potter. In high school, he won the Bank of America award in art for his pottery. He does oil paintings and pen and ink drawings too. He has built several pottery kilns for schools, including helping with the Wasatch Academy kiln. Chad is a native of Sanpete and has lived most of his life here except for a few of his childhood years in California. Chad enjoys all phases of outdoor activities and is truly a modern day Yul Gibbons, being an outstanding cook, leaning toward healthy natural foods and good nutrition. Chad at one time cooked a complete goose dinner for ten on a coal and wood cook stove, quite an accomplishment for a young man don't you think? Chad's lasagna recipe and casserolls recipe are constantly being asked for, so here they are, along with a few others that you will enjoy, too. take part in one or more service projects for the community.
