While stirring, add flour and cook until it froths, about two minutes. Continue to stir and gradually add milk. Put into lower part of double boiler over boiling water; add seasoning. Stir until it thickens, then cover and cook 10 minutes. IRISH MEAT PIE WITH NOODLES 1 lb. beef from chuck or rump 4 Tbsp. flour Salt and pepper ' Tbsp. fat Tbsp. finely chopped onions 1 cup cubes of turnips 3 young carrots cut into cubes 1 package noodles Vi cup buttered bread crumbs 1 clove garlic 3 2 Cut meat into cubes, salt and pepper and dredge with flour. Brown in hot bacon drippings or fat cut from meat. Pour into heavy stewing pot with onion, add 1 quart water and let cook slowly until tender, about two hours. After meat has cooked IV hour, add carrots and turnips. Cut garlic and rub baking dish with it. Pour into it the browned stew and cover with noodles. Sprinkle with buttered bread crumbs and bake in hot over 20 minutes. SPAGHETTI WITH RED KIDNEY BEANS 2 cups canned red kidney beans 1 Tbsp. bacon drippings 1 Tbsp. finely chopped onion 1 Tbsp. flour 1 The curious or adventurous will surely want to try some of the unusual recipes from this publication. MACARONI WITH PEANUT SAUCE 1 d package macaroni 2 cups thin white sauce Vi cup shelled peanuts 1 cup buttered bread crumbs 1 tsp. butter for baking dish one-poun- Grind or chop peanuts and add to whjte sauce just after adding milk 2 1 cup canned tomatoes oz. bacon cut into small pieces pkg. spaghetti Saute bacon. Make sauce by cooking onion until soft at low temperature in bacon drippings. Add flour, stirring constantly until it froths; then add strained tomatoes jand cook five minutes. Add sauted bacon and kidney beans and simmer 20 minutes. Line bowl with spaghetti and into center pour beans and sauce. Bake in oven at medium heat until all ingredients are warmed through. |
