Darlene has also given an easy potato casserole, made with grated cooked potatoes in a creamy sauce which is poured over them, then topped with crushed cornflakes and baked. THE BROWN sugar cookies have a tasty brown butter icing, the butter is browned before the pondered sugar is added. 14 tsp. pepper cup green pepper, chopped Vz lb. Cheddar cheese, grated tortillas Fresh mushrooms, sliced Black olives, sliced !4 EASY POTATO CASSEROLE 6 medium potatoes 8-- SAUCE: I can 10 oz. cream of chicken soup cup sour cream or IMO Vi to cup cheese, grated A cup green onion, chopped BROWN BEEF with onion and drain off excess grease. Add soup, pimiento and spices as you like, add mushrooms and olives if desired, mix thoroughly. Use flour 1 1 tortillas. Spoon a generous portion of mixture on each tortilla, adding a little grated cheese and roll up, place in oiled 9x13 inch casserole. GARNISH with more grated cheese and bake for 30 minutes at 350 degrees or microwave for 4 minutes on high and serve. TOPPING: I to 2 cups cornflake crumbs Butter BOIL THE potatoes with skins until done, then cool and grate after peeling. Place in a two quart casserole. Mix the sauce but it is not necessary to cook it. Mix the chicken soup, sour cream, cheese and onion, adding salt and pepper if desired. Pour over grated potatoes in casserole. MEANTIME melt butter and mix with crushed cornflake crumbs BROWN SUGAR COOKIES 'h lb. butter or margarine 2 eggs CRACKER JACKS cup brown sugar It brown color. Bake at 325 degrees for 15 minutes, stirring once in a while to prevent too much browning around the edges. Cool and store in airtight containers. Our schools and mental health community are doing more all the time to help educate the public about mental health issues. We as citizens need to participate and learn about mental health problems. Mental health services, treatment programs and centers are rapidly expanding - this means we will have these community resources available when needed. OUR GREATEST challenge is to overcome d the stigma attached to mental illness. We need to learn to accept those that need help with compassion, understanding and without judging. Until we do, a great many of us will continue to suffer and hide our illness. Mental illness can happen to any of us. and it probably will happen to someone we love.
