J PEACH UPSIDE DOWN CAKE Va cup soft butter or margarine Vi cup brown sugar 2 cups drained sliced peaches 6 maraschino cherries 13 cup shortening 'A cup granulated sugar egg, unbeaten cups sifted flour 1 Vi tsp. baking powdef Vi tsp. salt Vi cup orange juice 1 1 Va SPREAD butter or margarine in the bottom of an 8 inch baking dish. Sprinkle with brown sugar. Arrange the well drained peach slices and cherries on top of the brown sugar. Cream the white sugar and the shortening. Blend in the egg, beat well. Add the sifted dry ingredients alternately with the orange juice. Pour the batter carefully over the peaches. Bake at 350 degrees for 50 minutes or until done. Let cool 10 minutes. Invert over a serving platter to remove cake from baking dish. Allow the syrup to drain out of the dish for a minute. Serves -- 6-- |
