SCONES 3 Tbsp. yeast 'A cup warm water 2 cups cold milk 'A cup melted shortening lA cup sugar tsp. salt (rounded) 3 eggs (beaten) 6'A cups unsifted flour DISSOLVE yeast in cup warm one-ha- of the flour. Add the yeast lf and continue adding the remaining flour. The dough will be sticky. Do not knead. Refrigerate for at least 30 minutes. (The dough can be kept in refrigerator for up to one week.) When ready to make seones, roll dough out on a floured board to Vs inch thickness. Cut into 2 to 2'A inch squares and deep fat fry at 350 degrees for about 2 minutes, or un Trees. SCONES Buttermilk quart buttermilk, warmed 2 pkg. yeast dissolved in cup of the buttermilk 2 Tbsp. sugar 2 eggs, beaten 6 Tbsp. vegetable oil or melted shortening ': tsp. salt 1 AI)1) AI.I. of the above ingredients to the buttermilk then sift 8 cups Hour, 3 tsp. baking powder and tsp. soda and add to mixture. Mix well. The dough will be soft and sticky Let rise until double, about hour. Stir down and put in refrigerator until used. Can be kept 2 weeks Roll out on floured board to a little les than ': inch. Cut into strips and fry in hot oil as you w'ould doughnuts.
