Show Rhodesian foods afternoon delight NOEITA'S NOOK By Norita Lancaster 462-283- 3 A few nights ago, I had the pleasure of spending a very enjoyable evening visiting with Janet Gwilliam and her very delightful family In Fairview. Janet is married to Dee Gwilliam, a graphic arts manager at Snow College. They have three children, Sherri, LeeAnn and Scott, also they have taken an Indian boy, Irvin Joe into their home on the Indian placement program. I found it rather amazing that Irvin Joe, who has an abunidence of artistic talent for an eight year old, should be placed with a family that has the talent and capability of helping him develop this talent more fully. Dee Gwilliam taught art at North Sanpete Jr. High, and Janet was an art major in college. In addition to being a homemaker, with all the duties that go with it, Janet is secretary to Dr. Sheril Hill at Snow College. Although Janet makes a delicious Trifle, a typical British or South African dessert, she says it is really her mother that cooks more of the British (South African) dishes. Janet says that she has become more Americanized in her way of cooking and has adopted the American way of life. Janet and her parents are from Rhodesia, South Africa. On a summer vacation from college, Janet was visiting her in then living parents, Sacramento, Calif., when she met the dated Dee, they were married a year later. Janet spent two years at BYU and admits it was there that she actually learned to cook. In addition to art, she enjoys cooking and sewing. Trifles are a very rich and delicious, as well as attractive dessert, sometimes used ih the British homes to decorate table during the main courses before eating it for dessert, depending, of course, on the type bowl used and how colorful the Ingredients; however, Janet Rhodesia has a unique mixture of foods, blending the English cuisine with the curries and spices of India. The recipes that Janet is sharing with us are mainly of British origin, except the Watermelon Konfyt (pronounced Konfate), which is a South African delicacy. Boil rind until tender and then drain. Make syrup of: sugar to Ma pint water to each lb. of rind. Pineapple Trifle economics. for newlyweds V 1 packet pineapple jello pint hot water 1 stale sponge cake 1 small can pineapple 1 packet vanilla pudding Whipped cream Dissolve jello in hot water and set aside to cool. Cut cake into small pieces, and put into dish. Pour pineapple juice and pineapple (cut up small) over it. Make pudding and pour over cake. When jello begins to set, whip into a stiff froth and pour over the pudding. Before serving, top it with whipped cream and sprinkle with nuts. For variation, Janet suggests, using 1 can fruit cocktail instead of pineapple, omitting jello. Pour pudding over fruit cocktail that is soaking into cake. Top with whipped cream and nuts.
