To me it seems proper to spend a season in Thanksgiving before we spend a season in thanks GETTING. An unknown writer once wrote, He who is not grateful for the good things he has would not be happy with what he wishes he had. ( A1 least not for very long.) Centuries earlier, Socrates proclaimed a similar belief when he declared, "To whom a little is not enough, nothing is enough." Reflect upon that for a moment. Most folks I know, myself included, have more than what is necessary to sustain life and fill needs, yet how many of us are satisfied? I find myself all too often grabbing for more when all about me, in reality, I can see what really matters: healthy children, my own health and strength, a warm home, a good husband and life in a still free country. Im reminded of the story of a little girl who went to visit an elderly neighbor on Thanksgiving to cheer him up. She found him seated before a skimpy meal of beans, vegetables and bread with an apple for desert. Her first feeling was one of sorrow and pity for this man seemed to have nothing. After a rather long visit with him this young girl discovered however, that his gentle old man possessed the greatest of wealth.. .that of being grateful for what one has. It doesnt matter if one has a feast or a crust of bread if his Thanksgiving is pure. It seems more than appropriate to reflect upon the agonizing struggles of our forebearers who tamed the land with little more than stubborn determination and prayer. Their first harvest was given up to three days of sharing their abundance with each other. The Indians and the land had carried many lessons to the Pilgrims who had been eager to learn ; now they reaped the rewards of those hard lessons. Note worthy is the fact that they shared what they had with each other. There were than more Indians Pilgrims on attendance that first Thanksgiving and a feeling of friendship and love. Perhaps it would be well to remember Albert on Schweitzers for you by doing things for others. We all have something to be grateful for. ..a good neighbor, our country, our friend, special health, strength, our country, our God. Before we start into Christmas, lets first give our thanks. It's not so much the size of the feast, rather the size of the joy in a loved ones heart. Have a special day. Hearty Eating on a Budget One of the best things about Thanksgiving is not having to cook for two days, but usually there is still turkey or ham staring back at you everytime you open the fridge long after everyone is sick of leftovers. Some make something different with it. Here is a repeat of one of my concoctinous for using left over meat. Boil the bones and skim off whatever you have turkey, chicken, roast beef, steak, or pork, with enough water to water to cover for two or three hours. Then pick off the meat and strain the broth. I always have several containers of this soup stock in my freezer to use for soups, gravies, chowmein, fried rice, casseroles and you name it. Why buy powdered mixes, bullion or soup to cook with when you can make your own stock for no extra cost and little effort? Carol's Meat Pie Peel and dice 1 large potatoe, 1 carrot and an a stalk of onion. Chop W in Saute square of celery. margarine. Cover and let cook until vegetables are tender. Add y4 cup flour. Stir. Then add 2 V cup broth. Stir and cook until mixture boils and is thickened. Remove from heat. Slowly stir into 2 beaten eggs. Add 1 cup meat to mixture. Season with salt and pepper. Pour into unbaked pie shell, top with crust. Bake at 425 degrees for 10 minutes. Reduce heat to 375 degrees and continue baking 30 minutes more. Serve hot with a crisp salad. By Carol Shaw 782-811- 6 Just the name of the holiday fills me with a warm - A glow. THANKSGIVING potpurri of nostalgia floods over me. Jostling in the car with brothers on the 2 hour ride to dinner. (We always seemed to leave at least an hour later than wed planned to.) - pies and Balancing candied yams on our laps. - Laughing and singing, Over the river and through the woods, to Aunt Marys house we go. The car knows the way, past the Point of the Mountain . . . - FINALLY getting there! - Kissing relatives I wasnt sure I remembered. - Being told how big and how pretty I was getting to be. I beamed. Chasing kittens. Starving while last minute things were done. - The crisp juicy tang of the apples we snuck from the shed. - Standing in the hay loft, shaking all over, for the eternity it took to gather enough courage to jump into the hay far, far below. - - Saying, Nothing to it. Playing Monopoly rolling on the floor and laughing so hard that my bulging stomach ached. - Pie. - Hide and Seek. - Lying in bed, squished between my two girl cousins nearest my age, intruding on the quiet night with our whispered fears, goals and ambitions. - Not wanting to ever go back home to the same old dull toys and games with the same old boring firends and the same old monotonous round: school, work, eat, sleep, start over. . . - Sleeping all the way home. Being glad to see our house in good old Roy. - Excitedly swapping adventures with my best friends, I swore I missed them terrifically the 2 days I was away I hope I am helping to build cherished memories in my kids! Have you ever noticed how Thanksgiving dinner has a habit of growing? I usually begin by saying, I think we should keep Thanksgiving simple this year. We are all too heavy. We spend a fortune with the price of groceries and its just a lot of work. I spend days preparing and maybe we spend twenty minutes a the table. About a week later Im sitting down to plan my menu and make a grocery list when Ray calls on the phone and asks what I am doing. I tell him and he says, Youre planning on hot rolls and butter of course? I sigh. Of course, Dont you think pumpkin pie is enough? It is silly to have three kinds of pie like we have in the past. Yeh, I guess it is, but if were only having one kind of pie, lets make it apple. Everyone enjoys apple. That is everyone who doesnt prefer pumpkin or cherry, I think. I must admit that Im feeling abused. Pumpkin pie is my favorite! I decide Im having a simple dinner with two kinds of pie. Later that evening Ray, my married son, calls to visit. During the course of our conversation, he mentions he can hardly wait for scalloped oysters. He loves them. Now I am having a simple (? ) dinner with two kinds of pie and scalloped oysters! ! During the next few days Kitty rushes in after school saying, Only one more week until Thanksgiving. I can hardly wait for cherry pie. I know you havent made cherry pie since last Thanksgiving. You dont have to beat me senseless. I know when Im whipped. We are now having a simple Thanksgiving dinner with three kinds of pie and scalloped oysters. Linda mentions that cheese stuffed celery and olives make Thanksgiving dinner for her. Matt wants the cranberry sauce, not jelly, sauce and black olives. Catching the spirit of gluttony, I know I must have the jello salad with the mayonnaise topping.
