Sevier Staff Score High In Food Safety Program If you would like to obtain a Restricted Use Pesticide License you can contact Craig Poulson at the Extension office to set up a time to take the exam. Every member of Sevier School District's foodservice staff has successfully completed the National Restaurant Association Education Foundation Safe Food Certification Course, SERVSAFE. Sevier District's food service staff met on January 20 at the Snow College Richfield Campus for eight hours of SERVSAFE instruction and testing. Piute School District's school food service staff joined them. Sevier School District Child Nutrition Programs Director, Karen G. Pace, a nationally certified instructor for SERVSAFE, administered the course to the staffs. "Parents, students, faculty and anyone who dines in our school cafeterias can be assured our staff is doing everything possible to keep food safe for consumption. Our staff is framed, and our managers have taken and passed the certified exam. I'm very proud of them. It's not an easy course to take or pass let alone score as high as they did," praised Pace. Food safety depends on every area, of the operation working properly including purchase of high quality food from a reputable distributor, receiving the food at the school or warehouse, proper storage and preparation, and serving the food to students and staff. "Personal cleanliness, especially frequent and proper hand washing, cannot be emphasized too much. It takes 20 seconds of vigorous scrubbing with soap to effectively reduce the number of bacteria on hands followed by rinsing in hot, running water and drying with single use towels. If you don't know how long 20 seconds is, sing the ABC song while scrubbing," said Pace. The course focuses on HACCP principles. HACCP is the acronym for Hazard Analysis of Critical Controls Points in food storage and production. It was developed by NASA for the safe feeding of astronauts during space travel. "When you walk into our kitchens, you will see staff members taking temperatures of food during preparation and serving to assure that the food hasn't been time or temperature abused, that it is being heated to the proper temperatures, held at the proper temperatures and served at the proper temperatures," continued Pace. SERVSAFE also covers sanitary facilities and regulations, pest control measures, microbial contaminants, physical contamination, food allergies, food borne illnesses, and what to do when the unexpected happens such as interruptions in water flow, gas, electricity and many others.
