Show Messenger Enterprise. Thursday, December 20, 1979 The Petersons Show How to Cook a Goose by Brace Jennings That favorite of all Christmas stories, "A Christmas Carol," is memorable for its characters: Bob Cratchit, Tiny Tim, Ebenezer Scrooge, the man who called Christmas a humbug, and, of course, the Spirit of Christmas. A Christmas Carol" was also memorable for the dinner: roast goose, stuffing, flavored with sage and onions, mashed potatoes and gravy and the pudding, presumably plum pudding, "so hard and firm. . . blazing in ignited brandy." Jim and Janice Peterson will have a similar Christmas dinner similar in its essentials, but with some modern innovations, like salad. Jim supplied the goose. A wild goose, he claims, is vastly superior to a domesticated goose, which is likely to be fat and flabby and swimming in grease after cooking. Bagging a wild goose," Jim says, "is an altogether different story than beheading a tame one. You slough around in the snow and the mud, hoping you wont shoot your foot off, shivering with the cold, wondering why you didnt use some sense and stay home by the fire. Some geese fly over and you're so cold you can hardly raise your gun. But you get one, I did it for Janice and the kids." "Our hero came home wan and weary, Janice says, "with sore feet and a cough but triumphant a in his all neck and legs goose hands. He still claims hes too tired to help wrap the presents, let alone put up the Christmas tree." The Peterson Christmas dinner will pretty much follow the format of the Cratchit dinner, with some additions, roast wild goose, sage dressing, salad, scalloped potatoes, buttered green beans (from the garden), spoon rolls, fresh vegetable and relish tray. Aunt Bettys carrot pudding. Gathered about the table will be the Petersons and their guests. And also present, as at the Cratchits, will be the Spirit of Christmas. Here are Janice's recipes for the Christmas dinner: Blend in one egg and add the yeast. Add 3'i cups flour. Mix until well blended. Cover and let raise 45 to 60 minutes. Stir down and spoon into well greased muffin tins. Let raise. Bake at 400 for minutes. 24-ho- 11 James Anderson Assigned to Pacific cups flour Navy Hull Maintenance tsp. salt Technician 2nd Class V tsp. nutmeg James T.
