Honey comes in hundreds of varieties, depending on the floral source the honey bee visits, so there are limitless options this Easter. A rich, dark buck-heat honey perfectly complements a ham, while a light, floral clover honey adds sweetness to a tangy vinaigrette, amply topping mixed greens or fresh spring vegetables. The sweet flavor of honey goes well with other seasonal neats, too. Honey is delicious baked into scrumptious hot cross buns or whipped irto creamy butter and spread on muffins. The egg was a symbol of fertility in many ancient societies, and it was associated with spring, considered to be a time of rebirth In Egypt, dyed eggs were hung in temples as emblems of regenerative life. In some cultures, eggs wrapped in gold leaf were exchanged in tire springtime; peasants, who couldn't afford the gold leaf, boiled the eggs in water with the pedals of certain flowers, thereby coloring them ri. 2002 King feature- Srd 2 1 Dash of ground cloves Bake ham on rack in shallow baking pan at 325F for one hour or to 120F on a meat thermometer. Lots and lots of Easter grass. And by that I dont mean the kind that comes from wheat seed that you grow in a container on you kitchen sink. Nooooo. I mean the cellophane kind that comes in bag that you get in the holiday section of the grocery store. Of course, no one sets out to buy a ton of plastic Easter grass. Me, I usually buy a bag or two, just enough to fill my childrens baskets. But let me , warn you now, die funny thing about Easter grass is as soon as its let out of the bag and m to the fresh air, it expands. And what you had thought, just moments ago, was exactiy enough to fill up one basket, maybe two, can now easily cover most of Rhode Island. If you think Im exaggerating, just ask my friend Shirley. She naively left an open bag of Floppys purple Easter grass on her kitchen table and went to change die laundry. When she came back, only five minutes later, it had worked its into the family r room and over the reclmer and : was heading down die hallway : after die cat Im not sure, but I think it I wanted to take over the chil- drens room, she said to me but I ; one day over coffee, in it the corral managed to ! linen closet with a broom. I And dont think for one . minute that you can solve any- -. thing by stuffing all of the . loose grass back into its ongi-- ! nal bag and putting on a twist tie. Any fool knows that, no matter how hard you push and squeeze and beg it wont fit back in. Sure you can always try to throw it away immediately 'after Easter. But this, my friends, usually doesnt work either. In fact last year I dumped all of our leftover Easter grass in the garbage can, jammed on the lid, and immediately wheeled it to the curb. Days later I found suspicious purple strands sticking out of the washing machine, lying on tep of the television set, waiting next to the shower, and tucked underneath the organic lettuce in the crisper. I ask you, do you explain that? Its astonishing, really, that we live in a society that can clone sheep and send a man to tiie moon, but cant figure out how to control Easter grass. Naturally you could always bypass the whole issue by growing real Easter grass from-- . rye seed. But that would just bring up a whole new set of problems, the kind which that would make worrying about a little extra plastic grass in your home seem, well, silly. Besides there are lots of practical uses for it, like, say, packing material or hair on paper bag puppets. Some people even stuff the toes of then-goopumps with it or, in some cases, use it as extra atnc insulation. Once my friend Julie even used it to make pompoms for her daughter who wanted to be a cheerleader for Halloween. The other nice thing about plastic Easter grass is that, just when youve grown tired and weary of picking it up, it will mysteriously disappear. But dont get your hopes up. It would be a stretch to say that its gone for good. In fact, my theory is that it doesnt really go away at all, it merely hibernates in the walls for a few months until its time to reappear disguised as tinsel. Trust me, crazier things have happened.
