By WINNIFRED C. ;ARDINE What a delightful time and meal we had Saturday evening when Lartei Harrington (Mrs. W, F.), 2740 East 3335 South St., and home economics teacher at West High School, wked a Chinese dinner for ore our eyes, in fact, she let us help. And we feel now like we could cook Just about is delicious a meal, at least it would have a good bit of the same good flavor. Mrs. Harrington speaks with authority when she speaks of Chinese food, for she spent five years in the Hawaiian Islands, first teaching sphool and then working for the government. One of her good friends there was a Chinese girl with whom she stayed a good bit and helped cook, ,until she herself had 'picked up a lot of the tricks and lot of, the good recipes. Like most Chinese, Mrs. Harrington doesn't measure. So we ourselves stood over her and measured the ingredients she added. However, variations in I. ingredients and amounts is desirable according to individual taste. So get in the habit of tasting and adding until these dishes are. Just right. Many people use cooked rice for making fried rice, but Mrs. Harrington starts hers out from the raw rice, and this is how she does it. Melt 4 to 8 tablespoons of butter in a heavy pan. Add I4 tó cup chopped green onion, 12 cup chopped green pepper and 3 cups raw rice, and brown all ingredients slightly. Add 5 cups water and bring to a hard boil, stirring to keep rice from sticking to bottom of kettle.
