In addition to remodeling the cafeteria, they have also made changes in the menu and food preparation techniques. The renovation was needed to improve service, according to Food Service Director Lori Walker. The previous setup was not effective. We wanted to change the style to be able to service dorm students just like our retail customers, and we could only do that if we expanded, she said. We also wanted to give the dining area more light and a nicer atmosphere. Northwest is trying to serve students needs by offering a new menu that infresh food cludes concept cooking inconcepts prepared each day. This cludes choices such as Worth the Wok, Fiesta Grande and Pasta Amore. The new menu also offers a vegetarian soup and entree everyday, Walker said. Northwest is also concerned with serving healthy meals. Walker orders low-fproducts across the board. They have cut down on the amount of grease used; olive oil is used for frying and canola oil is used in the fryer instead of waitlard, according to Walker. They are which ing on a shipment for a salad bar at dressings will have regular and low-fbar fruit every and will offer a fresh morning. at Our philosophy is to serve the students needs. This includes nutritional needs such as low-fproducts for those watching their cholesterol and sugar-fre- e choices for diabetics. This also includes working around classes to accommodate students schedules, Walker said. She encourages customer comments and suggestions. There will be comment cards available and surveys will be done every at semester. Northwest is also using plastic dishes to help reduce waste. The baskets and plates can be used again, so please do not throw them away, Walker said.
