With fishing season here, a new source of fresh meat will be available to many households, according to Extension Foods and Nutrition Specialist Flora Bardwell. Fish are high in vitamins A and B and in iron. They are low in calories because of the low percentage of fat in fish. She gives three general rules for keeping fish in good condition: Clean as soon as possible, keep clean and cool and cook them as soon as possible after catching. Mrs. Bardwell suggests baking some of the fisih to add variety in meal planning. Try deep fat frying, frying or boiling fish on other occasions. However, she warns, do not overcook. When fish are cooked too long they lose their flavor and become too dry. Remember, fish do not have much fat in their tissues, so it is easy for them to become dry. A fish is cooked enough if it breaks apart when tested by a fork. Here is one suggestion for preparing fish in the oven salt on the outside, place a strip of bacon on top, and bake or broil. When they are done, pour 2 or 3 tablespoons of light cream over the fish and serve Immediately. If you do not Intend to eat the fish immediately, refrigerate them. When your supply is ample enough to do some freezing, one successful method is to freeze fish in a block of ice. Place the fish in a baking pan, alternating directions of the head and tail of the fish. Put fish of a similar size together, if possible. Fill the pan with water and freeze. Once frozen, remove the block of ice from the pan, place the frozen ice and fish in a plastic bag, wrap in freezer paper and store in the freezer. If you wish, you also may them dry in polyethelene bags then wrap the bags in freezfreeze er paper.
