Show Wednesday, April 23, 2003 Page 4 Nephi, Utah Enjoy a delicious Cinco de Mayo celebration Spicy Mexican Peanut Soup tablespoon vegetable oil onion, chopped 3 cloves garlic, minced 2 cups chopped cooked chicken 2 cans (14 12 ounces each) peeled, diced tomatoes with green chilies 12 cup creamy or crunchy peanut butter 14 teaspoon salt 14 teaspoon crushed red pepper flakes 1 cup buttermilk 2 tablespoons chopped cilantro or parsley 14 cup chopped peanuts Heat oil in large saucepan over medium heat. Add onion and garlic; saute until onion is transparent. Add chicken, tomatoes, peanut butter, salt and red pepper flakes. Heat, stirring occasionally, until peanut butter is melted. Blend in buttermilk and cook until heated through. Stir in cilantro or parsley. To serve, ladle soup in bowls and garnish with cilantro and chopped peanuts. Yield: 4 servings. 1 1 Chicken and Avocado Quesadillas Kalatoni Naufahu and Jana Lee Stanley tablespoons olive oil, divided tablespoons lime juice 12 teaspoon ground cumin 2 cups cooked, diced chicken or prepared chili or shredded barbecued beef 1 fully ripened avocado, pitted, peeled and cut in cubes 4 flour tortillas (7 to 8 inches each) 1 cup shredded Jack or Pepper Jack cheese Preheat oven to 450F. In a medium-sizebowl, combine 1 tablespoon of the oil, the lime juice and cumin. Add chicken and avocado; toss gently. Lay tortillas on a baking sheet; brush both sides with the remaining 1 tablespoon oil. Spoon chicken and avocado mixture on one side of each tortilla, dividing evenly; top with cheese. Fold tortillas in half to cover filling. Bake until tortillas are crisp, about 8 minutes. If desired, serve with salsa or sour cream. Yield: 4 quesadillas. 2 2 d Mushroom and Cheese Quesadillas with Fresh Mango Kalatoni Naufahu and Jana Lee Stanley to marry in the Salt Lake Temple Toni Naufahu and Jana Lee Stanley will be married on Friday, April 25, 2003 in the Salt Lake LDS Temple. A reception will be held in their honor that evening from 7 to 9 p.m. at the Mona LDS Church, 65 East 100 North and Saturday, April 26, from 4:30 to 8:00 p.m. at the Polynesian Restaurant, 1157 South Glendale Drive, Salt Lake City. In case of Salsa 8 ounces Monterey Jack cheese Vegetable oil, as needed pound mixed fresh mushrooms, thinly sliced (such as white, portabella and shiitake) 1 can (4.5 ounces) mild green chilies, well drained 12 cup finely chopped onion 1 teaspoon minced garlic 12 teaspoon salt 18 teaspoon ground black pepper 8 flour tortillas Fresh Mango Salsa (recipe follows) Cut Monterey Jack in thin slices; set aside. In a large skillet, over medium-higheat, heat 2 tablespoons oil until hot. Add mushrooms; cook and stir for 2 minutes; remove 1 cup for garnish; set aside. To remaining mushrooms, add green chilies, onion, garlic, salt and black pepper; cook and stir until mushrooms are tender and liquid evaporates, 3 to 4 minutes longer; remove from heat. To assemble quesadillas. Spoon mushroom mixture on 4 tortillas, dividing heat, heat 1 teaspoon evenly. Top with cheese slices and remaining tortillas. In the cleaned skillet, over medium-hig1 oil. Add cook down with until browned on both sides and vegetable spatula); lightly quesadilla (pressing lightly cheese melts, about 1 minute. Remove from skillet; keep warm. Repeat with remaining quesadillas using additional oil as needed, cut quesadillas in wedges; top with reserved mushrooms and fresh mango salsa. Yield: 4 quesadillas. Fresh Mango Salsa: In a small bowl, combine 2 cups diced fresh mango or peaches, 2 tablespoons fresh lime juice, 1 to 2 tablespoons chopped fresh cilantro leaves, 1 tablespoon finely chopped fresh jalapeno and 14 teaspoon salt. Local Response teams, receive smallpox vaccinations The Central Utah Public Health Department participated in the first phase of the federal smallpox vaccination program. Local medical personnel who are part of the local smallpox response team, received their smallpox vaccines last month.
