The holiday season is a wonderful time to teach kids the value of giving. One way is to spend time together creating cherished homemade gifts such as gingerbread men and frosted holiday cookies all with the zesty aroma and special flavor of navel oranges, a Christmas memory in itself. Even little hands can help decorate cookies, stir gingerbread dough and arrange e d the oranges in the basket in the following collection of recipes: citrus-flavore- easy-to-mak- Orange Gingerbread Men 1 package (about 14 ounces gingerbread mix) Grated peel of 1 orange 14 cup fresh squeezed orange juice Decorating icing, red hots andor raisins In large bowl, combine gingerbread mix, orange peel and juice; mix well. Knead dough lightly to thoroughly blend in gingerbread mix. Cover and chill 1 hour. On thickness; cut with lightly floured board, roll dough, one half at a time, to floured gingerbread man cookie cutter. Place on lightly greased cookie sheets. Bake at 375F. for 8 to 10 minutes. Carefully remove and cool on wire racks. Decorate as desired. Makes 8 to 10 large gingerbread men. 18-inc- h (6-inc- h) Holiday Orange Cookies cups flour teaspoons baking powder 14 teaspoon salt 23 cup margarine, softened 34 cup sugar 1 egg Grated peel of 2 oranges 3 tablespoons fresh squeezed orange juice Chopped unsalted almonds or pistachios, shredded or flaked coconut, colored sugar crystals, cinnamon sugar, decorating icing 2 2 etc. Sift together flour, baking powder and salt. In large bowl, cream together margarine and sugar. Add egg, orange peel and juice; beat well. Gradually blend in dry ingredients. Cover and chill 2 hours. Shape dough into or roll balls, logs (3 x thickness and cut with lightly floured holiday-shape- d cookie cutters. Roll or sprinkle cookies with chopped dough to nuts, coconut, etc. Place on ungreased cookie sheets. Bake at 350F for 12 to 15 minutes. Remove and cool on wire racks. Decorate with icing. Makes about 3 dozen. NOTE. To make rolled cookies for use as gift tags or hanging Christmas tree ornaments: Cut out cookies and place on baking sheets. To make holes, cut paper straws into lengths. Press one end of straw into unbaked cookie at desired location for hole. Remove straw and shake out dough from inside of straw. Replace straw in hole. Bake cookies and cool. Carefully twist out straw.AVrite message or decorate with icing. Run a ribbon through hole and tie a bow or form a loop and knot. This easy recipe uses mostly ingredients. While cranberries are especially festive, any dried fruit can be used. For a crunchier granola, use the old fashioned oats. In large bowl, combine all ingredients except cranberries; mix well. Spread evenly in 15 x jelly roll pan. Bake 40 minutes or until golden brown, stirring every 10 minutes.
