Your time in the kitchen can be simplified if you follow these simple tips for preparing the bird: First, buy a turkey large enough for family and friends at least a pound for each person, then add a few extra pounds for leftovers. Consider trying a kosher turkey, which many say are cleaner and healthier than ordinary turkeys. A frozen turkey will take 24 hours to defrost for every five pounds so, a turkey will take 4 days, lb defrost in cold d in a large, covered pot filled with cold water. Replace water every half hour. Use foil to cover the breast once it turns golden brown. Brush with juices from the pan periodically. The turkey is done when 180F is reached in the thigh, 160F in the breast, or 165F in the center of the stuffing. Let the bird stand 20 minutes before carving. If youre lucky enough to have leftovers, consider making hearty delicious soup. Heres a recipe for savory Turkey White Bean and Escarole Soup. things nerve-wrackin- tin-ke- y 20-pou- tin-ke- y plastic-wrappe- r Turkey, White Bean and Escarole Soup 2 tbsp. olive oil 6 garlic cloves, pressed cup chopped onion bay leaf 1 celery stalk, chopped 2 medium carrots, peeled and diced 1 tsp. salt 12 tsp. freshly ground black pepper 2 cups cooked white beans (great northern, navy, or pea beans, fresh or canned-se- e note) 6 cups chicken stock, or good instant or low sodium canned broth 3 cups packed cooked ground or diced leftover roast turkey e 12 pound escarole or spinach, washed and torn into pieces 2 cups al ditalini or lumachelle pasta Freshly ground nutmeg In a heavy soup pot or Dutch oven, heat 1 tbsp. of the olive oil over low heat. Add half of the garlic and the onion and saut4 until the onion is limp, 3 to 5 minutes. Add the bay leaf, celery, carrots, salt and pepper. Cook, stirring occasionally, for about 5 minutes. Add the beans and cook 4 minutes. Add the stock, cover and simmer slowly 20 minutes. Meanwhile, in a skillet, heat the remaining 1 tbsp. olive oil over medium-hig- h heat. Add the remaining garlic and saut, stirring, 2 minutes. Add the escarole and saute until wilted, about 2 minutes. Remove the skillet from the heat and add its contents to the soup.
