Place oil into a 12 deep oven, heat until oil just starts to smoke. 2 Rub chicken inside and out with oil, salt, pepper, parsley, sage, and thyme. 3. Stuff chicken with one (1) onion quarter, and one (1) clove garlic. 4. Place chicken, and two (2) onions into oven and cook 30 to 45 minutes, basting often with juices and oil. 5. Add potatoes and carrots, continue to cook for about 25 minutes. 6. Add remaining onion, mushrooms, squash and herbs, cook till tender, add water if needed. . 7. Serve while piping hot. Vegetables are good for you, says nutritionist Don't mistake supplements for vitamins when putting vegetables on your menu. Even if beta carotene supplements wont prevent cancer, the carrots and leafy vegetables that provide this substance are healthful and offer protection against illness, says a Stanford clinical nutritionist. Although two major federally funded studies showed that taking supplements of beta carotene was not helpful at preventing heart disease or lung cancer, the evidence is still compelling that fruits and vegetables rich in beta carotene are essential to a healthy diet and may help protect against cancer, heart disease and other major maladies, says JoAnn Hattner, a dietitian at Stanford Health Services and a spokesperson for the American Dietetics Association. Beta carotene is converted by the body into vitamin A, which has been shown to be essential in good eyesight, disease prevention and bone growth. On January 19, the National Cancer Institute (NCI) released the results of two studies involving the use of beta carotene as a food supplement.
