Sanitation of restaurant, eafetartaa, delicatessen shops and grocery stores and fruit stands, where food is kept on exhibition for sale, was the subject of a rather heated discussion before the city commission yesterday, when committee from th Retail Merchants association and from ths restaurateurs organisation ware present to protest vehemently the enforcement of a newly agalna amended ordinance designed to protect the buying end consuming publlo. Harry Finch, as president of the restaurant men, declared that the ordinance would work a hardship on the better class of restaurants and cafeterias, th latter being th hardest hit. He pointed out that, if kept in an airtight receptacle, a "soft or cream pi will sour in an hour or two. He said, however, that th cafeterias were probably more seriously affected than th restaurants, sines they have th goods they ar aervlng exposed tor sal. C. A. Shay, proprietor of a South Main street cafeteria, said It would cost J3000 to Install equipment that would bring his house Into strict compliance with th law if the letter were enforced, and that the result on his sales would be even mors disastrous. Another restaurant man suggested that the enforcement of the ordinance1 would increase the prices of foodstuffs In th better class houses Ths committee from the restaurants all declared that their houses were conducted in a strictly sanitary manner, hd thatin everything was as clean when served their places of business as when served in the commissioners homes; cleaner, they said, and more sanitary than in 90 per cent of the homes. The secretary of th Retail Merchant protested against the enforcement of the 00 members ordinance as applied to th of that organisation, who, he said, all took extreme car that foodstuffs of th character Indicated should be sold under only the most sanitary conditions. Dr. Willard Chrlstopnerson. city health officer, pointed out that If ths situation In Halt Lake Is to be handled property, the law must have teeth in it. He did not think that the city health department would arrest proprietors who are operating sanitary places, but referred to various customs that prevail in some pieces of business In Balt Lake which, to say ths lessL and in the officer's words, ar not as they should bs. Complaint had com to his office occasionally, he said, from patrons of cafeterias, who protested against the genersl public getting too close to the food. He also referred to the presence of cockroaches in some restaurants, but the cats and cafeteria present managers dented that there were any cockroaches In their places of business Moreover, they pointed out practical difficulties in the way of a screen of some sort, behind which the health officer suggested that food might be placed, to protect the public. J. N. Smith of the United Grocery declared that the new ordinance Is " holly Impractical, and pointed out that In the delicatessen shops, as in the cafeterias the product Is moved qblckly, and seldom Is on the counter more than an hour or so. A strict code of ethics must be subscribed to and maintained to become a member of this association. Ward-Peterso- n . .
