You don't absorb vinegar; it goes into your digestive system and gets churned up. What gets absorbed into your system is no longer vinegar." Dr. Victor Herbert, author of "The Mount Sinai School of Medicine Complete Book of Nutrition" drink called Jogging in a Jug, apple cider vinegar is a folk remedy that can ease the ailments of aging. Jack McWilliams, a dairy and cotton farmer from Ala., has hit the jackpot jugs of his tart, selling cranberry-colore- d vinegar product. Bottle pyramids are stacked in supermarkets and convenience stores throughout the South, and store managers say sales have been brisk, almost on par with cereal after the 1988 craze. Most stores 1 5 a bottle. $6. charge McWilliams, who recently d in Orlando, Fla., in his shiny green van with "Jogging" license plates, said he simply wants to spread the good word about vinegar. After he does, he believes, customers around the country will pucker up in praise. Doctors and nutrition and health experts may be the hardest to convince. Professional opinions on the product vary from doubting the benefits of the product to calling it sour snake oil. With the zeal of a preacher and the folksy phraseology of Ross Perot, McWilliams says apple cider vinegar reduced his heart disease, helped his arthritis and relieved his breathing. About two ounces of the liquid every day will do the trick, he says. If you doubt him, he'll cite passages from the Bible, Tolk medicine and literature and historical anecdotes on the curative powers of vinegar. If you doubt him still, he'll whip out a notebook filled with testimonial letters from hundreds of satisfied consumers. "We're used to people laughing about it for the first 15 days. After that, they don't laugh anymore," McWilliams said. He said that in 1 988 he had wasted down to a shadow of his self. Just when life looked bleakest, he remembered his grandmother had always recommended a good dosing, of cider vinegar to cure what ailed folks. Her children all lived to ripe old ages, including McWilliams' father, who lived to be 93. McWilliams drank a little vinegar every day and within a week had more pep in his step. McWilliams' physician, Dr. Jerry Williams, would not comment on his patient's condition either before or after drinking vinegar. Since Jogging in a Jug went on the market in October of 1989, McWilliams has sold millions of bottles, mostly through d advertising. He is on how much money his Alabama-base- d Third Option Laboratories has made on the product. But company officials said they sold more than 1.2 million bottles in the first three quarters of 1993. At an average of $6 a bottle, that means the company grossed more than $7 million this year. That's pretty good for a man whose farm was once in foreclosure proceedings. But does the stuff really work? Most experts doubt it. The Food and Drug Administration won't allow McWilliams to print health claims on the label and has the product under investigation because of McWilliams' claims that it can improve health. McWilliams says the vinegar works because it's a natural cleans- er that dissolves calcium and mineral buildup in the body the way it loosens grunge in a coffee maker or peels the plaque out of water pipes. Certainly, a calcium tablet soaked in vinegar will dissolve in a few hours. The acetic acid in vinegar causes the cells to contract and expel toxins, McWilliams said. Brown apple cider vinegar in particular, not distilled white vinegar, works the best because it also contains potassium, he added. "We're on the threshold of something that hasn't been researched. The lack of research bothers Dr. Victor Herbert, author of "The Mount Sinai School of Medicine Complete Book of Nutrition" (St. Martin's, 1990) and a national authority on nutritional hoaxes and cultism. He called McWilliams' vinegar worship pure bunk. "The claim that cider vinegar clean up arthritis is a lie. The claim that cider vinegar is a natural solvent and can dissolve the calcium in your arthritic joints is a lie. The fact that you can dissolve calcium tablets in a glass of vinegar is irrelevant," Herbert said. "It's ridiculous. You don't absorb vinegar; it goes into your digestive system and gets churned up.
