More than people are trained by the Foundation each year, who then train their staffs in proper food safety procedures. The Beef Industry Council and Pork Industry Group sponsored research testing the efficacy of organic acid rinses on beef and pork carcasses. The USDA recently approved this process, which can significantly reduce the number of bacteria present on carcasses during slaughter. The Meat Board sponsored a Food Safety Roundta-bl- e last July which included members from USDA's Food Safety Inspection Service, meat packers and processors, academia, and Meat Board research and meat science staff. Among the issues discussed were decontamination and prevention technologies, and development of standard procedures for sampling and identification of foodborne pathogens.
