I am going to begin today by ai swering some of the questions which have been asked me in the last two weeks. During my lectures in Ogden I made the statement that children are sometimes considered subnormal mentally, when. in reality they are merely improperly fed. This statement called for a great deal of thought among the mothers, and I am' glad it did. I have received no less ,than eight: or nine requests for well balanced meals , for the; child in school, particularly lunches where it is necessary that they be carried to school' by .. j the child, One question that I- am asked, Is peanut butter a- good sandwich filling in this case.; Peanut butter is in itself a very concentrated food and requires deliberate and prolonged' mastication. It, however, tastes well and children are usually willing to chew it long enough I consider the peanut butter sandwich, especially when the peanut butter itself is thinned by the aid of cream, .an ideal sandwich filling. Another ideal sandwich filling Is that of minced broiled bacon. Evry child's lunch should contain fruit, it may be evaporated; should contain bread and butter, and so'metimes the filling may be one of 'the marmalades or the jellies, or conserves. I do, not consider cold hard boiled eggs a suitable addition to a child's luncheon. They are seldom 'every, mastilcated thoroughly, and the white of an egg, hard boiled, is exceedingly difficult of digestion. A lettuce salad sandwich, or a tomatoe sandwich, with the addition of sliced onion on top of the tomatoe, makes an ideal sandwich for the child's luncheon.' j' noon hour is usually exceeding'The ly short and children are anxious to get out to play. The inclination is to hurry through the luncheon. In some cities at the present time, the teachers are meeting with the children who are compelled to stay for their luncheons, and during the twenty minutes usually consumed are giving them delightful stories of the educational type at this time. It seems to me this is an ideal way to pass the lunchean time. This will foster slow eating and good manners among the children. I am giving you today three ideal luncheons for the children. I gave you, during my lecture in Ogden. a rpceipe for prune, .Holy Cross hospital style. This was using the dried prune with the seed extracted, a nut meat placed in the cavity and rolled m powdered sugar combine with grate orange peel. These 'are exceedingly nutritious and tasty and take the place of a sweetmeat or a; dessert, if you please, in a child's luncheon. For each child four prunes, on sandwich, composed of two slices of walnut bread and two slices of broiled bacon.
