Combine lA cup mixed fruit and rum extract and let stand until needed. Dissolve yeast in V cup warm water. Add to milk mixture. Stir in 1V4 cups flour and beat well with spoon until smooth. Let stand in warm place until bubbly. Add eggs, salt, lemon rind and nutmeg. Mix well. Add 1 cup flour and mix with spoon . until smooth. Add remaining flour about 14 cup at a time, mixing well after each addition. (This may also be prepared in bread mixer.) Knead on floured board until smooth. Form a large flat circle with the dough and press raisins, almonds and fruit that has been mixed with rum extract. Thoroughly mix fruits and nuts into bread dough. Butter a large bowl and let dough rise, buttered side up, until double for about one hour (cover). Punch down and divide into 2 equal parts. Knead each and shape into an oval that is about 10 inches by 7 inches. Knead almond paste to soften. Divide into 2 equal parts. Roll each part to length of bread and place in center of oval. Fold dough over so top edge is about an inch short of matching bottom edge of bread. Brush with melted butter. Place on large greased baking sheet. Rise until double and bake at 350 for 35 to 45 minutes. Watch closely so as not to bake too hard. Brush with melted butter, sprinkle with powdered sugar, cool and wrap tightly. Best when aged a few days. Yield: 2 large loaves May brush inside of bread with melted butter. Harmina B.
