February will also see the debut of a partnership between the Park City Wine Club and the Salt Lake Culinary Center, said Club President Pamela Wood, a certified sommelier. The union’s first pairing event is aptly titled “Wine and Chocolate/Chocolate and Wine: A Match Made in Heaven.” The class will run for two hours, 6-8 p.m., on Friday, Feb. 9, at the Salt Lake Culinary Center, 2233 S. 300 East in Salt Lake City. The cost is $65, and it includes the wines, the chocolate ingredients and education. “This is a fun early Valentine’s Day date night, or a time when friends can get together and have some fun with wine and chocolate,” Wood said. “Also, this isn’t just learning about and tasting chocolates and wine. It’s a hands-on experience. So there will be some education, tasting and doing.” Chocolate is similar to wine in that the taste is affected by where the ingredients are grown and the culture of those areas, according to Wood. “Depending where it comes from – Ecuadorian, Madagascan – there are different elements in the cocoa bean that makes the chocolate,” she said. Participants will learn the history of chocolate and learn how to make their own truffles. “They’ll also learn what dipping chocolate is and how to dip fruit and pretzel sticks in it,” Wood said. “They will also learn about five different wines and pair them with the chocolate, which will be provided by Ritual Chocolate.” The evening will start with the introduction to the wines and chocolates. “We’ll do a little pairing before we start working on the dipping chocolate,” Wood said. “We’ll then take a break and make truffles.” While the truffles set, the class will sample Ritual Chocolate’s brownies. “The brownies are gluten free and doesn’t contain nuts,” Wood said. “Those crunchy things are just chocolate nibs.” Please see Wine, C-4 COURTESY OF PAMELA WOOD Park City Wine Club President Pamela Wood, a certified sommelier, prepares to saber a bottle. Wine Club president grateful for donations Fundraiser helped fire victims Scott Iwasaki The Park Record The Park City Wine Club held a silent auction and opportunity drawing fundraiser in November to benefit families who lost their homes and other possessions in the wildfires that ravaged the winemaking communities in Napa and Sonoma counties. The initial goal was to raise $5,000, and thanks to generous item donations of items from the greater Park City area residents, the event raised $7,000, said Pamela Wood, president of the Park City Wine Club. “We also had a donor there who donated $5,000, so we ended up raising a total of $12,000,” Wood said. “I would love to thank everyone in our community for the donations.” Wood bought gift cards and on Dec. 2, flew to California and delivered the cards to different organizations that were helping with the relief efforts. “Through a group organized by sheriff’s deputies, I met and cried with some of the families who we helped,” she said. “It was amazing.” Wood visited Sonoma, Napa and Santa Rosa and drove through the wildfire aftermath. “I had to pull over after I saw the devastation,” she said. “I don’t know how all of the people got out of there when the fires swept through at 1:30 in the morning.” The wildfires started in early October. They burned more than 250,000 acres and killed at least 43 people. “I just sat there and looked at block and blocks of burned chimneys, cars and even washing machines,” she said. “There used to be 700 houses in the area I drove through.” During her visit, Wood also stopped at Gundlach Bundschu Winery to help with another fundraiser. “They are one of the oldest family-owned wineries in Sonoma,” she said. “They were so grateful for the gift cards because they were doing their benefit for the firefighters who lost their homes while they were trying to save other homes.” v tam n THE INTRAVENOUS VITAMIN THERAPY The Park Record’s “Help Wanted” section has the jobs you need to support your gear addiction BAR HAVE A KILLER HANGOVER YOU NEED TO KICK?
