And you've never found one of them that was any good as soon as it was thawed out you had to throw it away. But now that same freezing process is being used to preserve eggs in frozen food lockers. So reports the U. S. Department of Agriculture. Egs that are to be frozen and stored ate first tatken out of their shells. If they are to be stored whole the first thing to do is to stir the whitvs and yolks thoroughly so that all of the yolks are broken. To this mixture something is added to keep the yolks from becoming gummy. Out in Oregon they have found that a tablespoon of homy to two cupfuls of beaten eggs will prevent the yolks from becoming sticky and gummy when they are thawed out. The Iowa Station Experiment o reports of corn syrup or of sugar or a teaspoonful of sMt will do the same work. Whatever is used must be thoroughly mixed with eggs. If the yolks are separated from the whites of the eggs and stored separately they must he stirred thoroughly, so that each yolk is broken, and the honey, sugar, or salt mixed in thoroughly as wiih the whole eges.
