Naomi Gillis of Pleasant Grove loves to prepare and serve vegetables that are irresistable. At a recent demonstration she offered the following recipes. With many of her recipes, vegetables become a main dish item. Numerous people who say they do not like vegetables have not had the opportunity to see just how flavorful vegetables can be. Try them - you'll be surprised how quickly your family will notice the difference when vegetables have added sauces or casserole ingredients. Harvard Beets 2 1 lb. cans diced beets 23 cup sugar 2 Tbsp. corn starch 2 cup white vinegar tsp. salt Va cup butter or margarine Drain beets; reserve juice. Combine sugar and cornstarch in three quart saucepan; stir in cup reserved beet juice, vinegar and salt. Bring to a boil, stirring constantly. Reduce heat, simmer for two minutes or until slightly thickened and clear. Add beets; simmer for 15 minutes. Add butter; return to boil. Serve immediately. Yield: 8 servings. Asparagus Souffle 3 Tbsp. butter 3 Tbsp. flour cup milk eggs, separated 2'2 cups diced cooked asparagus 34 tsp. salt Melt butter in saucepan; stir in flour to make a smooth paste. Add milk gradually; cook slowly until thickened, stirring constantly. Beat egg yolks until thick and lemon colored; stir in asparagus and salt. Stir in white sauce; mix gently. Beat egg whites until stiff; fold into asparagus mixture. Pour into greased casserole; place casserole in pan of hot water. Bake at 325 for 35 minutes or until firm. Yield: 6 servings. 1 4 Hawaiian Beets Over Night Layer Salad i head lettuce or red cabbage, 2 No. 2 cans cut beets 1 No. 2 can pineapple chunks ; enough to put on a layer 1 can chestnuts, diced . 3 Tbsp. corn starch ; 1 10 oz. package frozen peas 5 Tbsp. sugar 2 Tbsp. vinegar cup chopped green onions 1 cup chopped celery k tsp. salt 1 bunch radishes, sliced 2 Tbsp. butter 1 layer raisins Drain beets and pineapple; . 1 cucumber, diced reserve- - juices. Combine corn 1 cup mayonnaise starch, sugar, vinegar and reserved 1 cup sour cream juices in saucepan. Add salt. Cook until sauce is thickened and clear, crisp bacon bits and grated cheese carrot curls & olive slices stirring constantly. Fold in beets 1 avocodo, diced and pineapple; add butter. Heat Layer first six ingredients and through, stirring frequently. Serve mix avocodo, onion and celery, immediately. Yield: servings. cucumber, celery, curls, olives. Sprinkle crumbs over top and sprinkle lightly with paprika. Bake at 350 for 35 minutes or until done. Yield: 6 servings.
