Show Free Press - Wednesday, April 3, 1985 - Page 5 Back Talk Start a tradition with Easter Brunch Oh, Easter time is the time for eggs and the time for eggs is Easter time. So, get out the cartons of eggs, gather the children around you and get busy. Just as in centuries past, eggs signify springtime. And for the Easter holiday they are hard cooked and suitably decorated to be used for egg hunts, egg rolls, basket-fillin- g and finally for delicious eating. The best method for hard cooking eggs is to place them in a single layer in a saucepan. Cover with enough cold tap water to measure at least one inch above the eggs. Cover pan and bring watei rapidly to boiling. Turn off heat and leave eggs in the hot water (with pan still over burner) for 15 minutes for large eggs. Adjust time up or down by 3 minutes for each size larger or smaller. When eggs have cooked sufficiently, plunge them immediately into cold running water and allow to remain there for about 5 minutes. Shells are easier to remove and there is less likely to be a dark surface on the yolks if they are immediately cooled. Refrigerate unshelled Easter eggs immediately after cooking and keep them refrigerated after they've been decorated. Eggs will keep about 1 week after cooking if properly refrigerated. And now, for that wonderful Easter brunch. Start a tradition, or continue one, by serving the following recipes for a delicious meal. Easter 6 Elegant Spicy Muffins cups flour tsp. baking powder tsp. cinnamon 34 cup sugar 2 2 2 legg cup milk tsp. orange rind '.3 cup melted butter or margarine Sift flour, then add baking powder, cinnamon, sugar and sift again. Combine egg, milk and orange rind. Add to flour mix. Stir in melted butter. Ham and Egg Pie 1 unbaked pastry shell V3 cup finely chopped onion 4Tbs. C2 stick) butter or mid-morni- Nest Eggs 1 margarine 2 Tb. prepared mustard 1 lb. ground pork sausage eggs, shelled hard-cooke- Deviled Eggs eggs d mayonnaise salt and pepper vinegar paprika Cut eggs in half lengthwise. Remove yolks. Mash. Mosten with mayonnaise. Season to taste with salt, pepper and vinegar. Mix until light and fluffy. Pile lightly into egg white. Sprinkle with paprika. eift-eivin- 6 hard-cooke- tsp. salt 4 tsp. pepper 4 tsp. dried dill weed 2 Tb. mayonnaise d 4 large eggs, chopped 2 cups chopped cooked ham 1 cup coarse soft (not dry) bread crumbs 2 cup shredded cheddar cheese Partially bake pie shell in 425 degree oven for 10 minutes. saute onion in 2 Meanwhile of the butter in small tablespoons saucepan. Stir in flour, then milk. Bring to a boil; cook one minute, stirring constantly, to make a very-thicsauce. Pour milk into shallow dish. Roll each meat ball in milk, then shake in coating mix to cover evenly. Place one inch apart in shallow baking dish. Bake at 490 degrees for 30 minutes or until crispy brown. Cut each in half; serve with catsup or chili sauce. blend in mustard, salt, pepper, 18 tsp. of the dill weed and mayonnaise. Fold in chopped eggs and ham. Pack mixture into partially baked pastry shell. 2 tablespoons Melt remaining butter and toss with bread crumbs, remaining 18 tsp. dill weed and cheese. Sprinkle over top of pie. Reset oven to 350 degrees and bake pie for 30 minutes or until hot and top is golden. Let stand five minutes before serving. Asparagus Egg Casserole crackers, crushed 4 hardcooked eggs, shelled 2 cups cooked asparagus, drained, saving liquid 1 cup cooked, diced chicken !4 cup slivered almonds 1 cup asparagus liquid plus milk 1 can cream of mushroom soup 1 cup shredded sharp cheddar cheese Sprinkle half of soda cracker crumbs evenly over bottom of l'v quart casserole. Slice eggs over crumbs, then arrange cooked asparagus over eggs, then chicken and almonds. Add asparagus liquidmilk mixture to cream of mushroom soup and blend. Pour over layers. Sprinkle with shredded cheese. Cover with remaining cracker crumbs. Bake at 350 degrees for 40 minutes. Remove from oven and allow to stand 15 minutes before serving. 8 soda well-grease- d Fresh Fruit Plate Arrange slices of pineapple, bananas, strawberries and oranges on plate.
