Any person born after December 31, 1965 is required to have a Hunter Education Certificate. At the age of 12 sportsmen can hunt small game, and with last year's legislation, 14 year old sportsmen can hunt big game in Utah; however, they too must pass the Hunter Education course. Typically throughout the State of Utah, Hunter Education Courses are taught in the spring and in the fall. The benefit of attending a spring session is that individuals can participate in the spring turkey and bear seasons in addition to hunting the dove season in the first part of September. Fall courses typically begin around the first part of You and Your Child: Success in Beef Often Misunderstood easy being bovine. health nut attacks you by going straight for the Big Mac. ' Changing gloom into joy, disillusionment into faith, this season of Christ's rebirth is the rebirth of the soul, lifting man's heart to glory and hope. May all of us experience the peace of Easter. FERN CHURCH avoid cholesterol, says Vori Menden-hall- , extension food scientist in the Utah State University College of Family Life. Cholesterol is found in all animal products, not just beef, he says. Mendenhall says America's favorite fish product, shrimp, has more than twice thet cholesterol of an equal-weigserving of beef. Chicken and turkey 'both have slightly more cholesterol than beef. Chicken, turkey and most types of fish still do contain less overall fat than beef, but Mendenhall warns that total fat and total cholesterol are two separate issues. The amount of fat in servings of various meats varies greatly with the cut and method of preparation. The way we prepare seafood such as shrimp and codfish - usually breaded and deep fried - greatly alters the fat content of a normally low-ffood, he says. For instance, Mendenhall says, the nutritional information provided by McDonald's shows that their fish sandwich is no bargain when it comes to fat or cholesterol. The fish sandwich contains more than twice d more cholesterthe fat and ol than a McDonald's regular hamburger. The jury is still out on the effects of eating a diet high in cholesterol, but if you are concerned about your cholesterol consumption, don't just porting. A highly manipulated, alarmist report by the Natural Resources Defense Council, using data rejected three years ago by reputable scientists, claimed our nation's children's health was being jeopardized by the use of agricultural chemicals. This is not true, even though the report was treated as by the "60 Minutes" gospel television show. Our food supply is safe. The Environmental Protection Agency establishes safe chemical residue levels after exhaustive testing. Tolerances are then set at levels below those shown to be safe in the laboratory. Food and Drug Administration inspectors were able to detect and thwart recent terrorist sabotage of produce imported from Chile through normal testing procedures, which is evidence of the effectiveness of monitoring system and the caution exercised in protecting our food system. Family farmers are being hurt by the public's misplaced trust in the movement. Apple growers are bearing the brunt of the problem now but all farmers will suffer if current misconceptions are not straightened out quickly. The public must be assured that . America's food supply is safe. Sincerely, Bill Ferguson Royal Apple Sales, Inc. Santaquin, Utah 84655 Now Showing At Your Public Library preceded her In death.
