This Week's Tidbits FRUIT OMELET egg Few grating orange rind 1 teaspoon orange juice Few grains salt 1 orange 2 teaspoons butter 2 teaspoons powdered sugar Beat the egg slightly, adding the orange rind and juice and salt reel the orange, removing all the white membrane, and cut into very thin slices. Sprinkle with one teaspoon of of powdered sugar. Melt the butter in hot individual omelet pan or frying pan. Four in the egg mixture and cook over a low heat, shaking the pan and pricking the mixture with a fork until all the mixture is cooked. Cool or fold and turn out on to serving dish. Sprinkle with remaining sugar and surround with slices of orange. 1 SIRLOIN STEAK JULIENNE Cut sirloin steak that is about inch thick in three-inc- h squares. Roll in flour, brown both sides lightly in frying pan. Place browned squares in baking dish, sprinkle with salt and pepper lightly. Cover with tomato puree and for each piece of sirloin steak allow one teaspoon of honey. After covering with tomato puree, add the honey. Then place a layer of onion and celery strip over the entire top, cover pan and bake slowly for two hours. Uncover, and bake for about fifteen minutes in good hot oven to properly brown steak. At least four or five strips each of onion and celery should be allowed for each serving. rs STUFFED LAMB CHOPS 10 chops 1 tablespoon butter 1 tablespoon chopped onion V. cup chopped mushrooms 1 teaspoon salt 1 tablespoon flour Pinch of pepper 2 tablespoon stock Trim the chops and cut very thick with sharp knife. Split each chop, being careful not to separate the meat irom the bone. Put butter in a pan and add the onion, cook slowly for live minutes, then add the mushrooms, salt and pepper and cook five minutes more. Add the flour and stock and cook a few minutes more. Stuff each chop with this mixture before it cools. Press each tightly together and broil. (If mushrooms are not available, bread dressing may be used, using a greater quanity of stock. Chop fine one can salmon and one hardboiled egg. Stir half a teaspoon moistened cornstarch in half a cup milk over slow fire. When thickened beat in salmon, one tablespoon butter and season. Cool. Make a rich pie crust, and cut the turnovers with a saucer upside down. Wet edges with cold water. Put a good tablespoon of salmon mixture on half of crust, fold over other half of cru st, fCcupe over other "half and press well together. Cut small slits on top, brush with milk and bake in quick over. GOLDEN ORANGE FROSTING Grated rind 1 orange 3 tablespoon orange juice 1 teaspoon lemon juice Yolk of 1 egg Confectioners' sugar. Mix grated orange rind with fruit juices and let stand 15 minutes. Strain into beaten egg yolks and add enough sifted confectioners' sugar to spread.
