ORANGE pkg. active dry yeast or 1 cake compressed yeast V4 cup water 1 cup milk, scalded V2 cup shortening BOW-KNOT- models S 1 One-thir- d cup sugar tsp. salt 5 to 5 cups sifted enriched flour 5 beaten eggs 2 Tbsp. grated orange peel V4 cup orange juice Soften active dry yeast in warm water or compressed yeast in lukewarm water. Combine hot milk, shortening, sugar and salt. Cool until lukewarm; stir in about 2 cups of the flour and beat well. Add eggs ; mix well. Stir in softened yeast. Add orange peel, juice and remaining flour (or a little more or less to make a soft dough.) Cover; let rest 10 minutes. Knead dough 8 to 10 minutes, on lightly floured surface until smooth and elastic. Place in lightly greased bowl, turning once to grease surface. Cover; let rise in warm place until double, about 2 hours. Punch down ; cover and let rest 10 minutes. Roll dough in 18 x 10 inch retangle, inch wide. V2 inch thick. Cut strips 10 inches long and Roll each strip back and forth lightly under your fingers; loosely tie in knot. Arrange on greased baking sheet. Cover; let rise until almost double, about 45 minutes. Bake in hot oven, 400 degrees, 12 minutes or until done. Makes about 2 dozen.. Orange Icing: 1 tsp. grated orange peel; 2 Tbsp. orange juice; 1 cup sifted confectioners sugar. Blend.
