Josh Burkman visits Lehi The UFC ultimate fighter Josh Burkman will be training train-ing at RAGE Fitness for his Oct. 25 competition in Chicago. Chi-cago. He will be holding an open workout at the facility, 121 E. State St., from noon to 2 p.m. on Oct. 18. Burkman will giving autographs, au-tographs, providing photo opportunities and it will be Ultimate Fighting Championship's Champion-ship's first appearance in that city and Illinois. "We have had a-fantastic response. We are amazingly busy," manager Andrew Gordon Gor-don said. "Usually we thank people for coming in but people have been thanking us for coming to Highland." The name Barbacoa comes from the Mexican way to cook meat in the ground. Gordon said. They have special Barbacoa pork and beef which are mildly spicy. "The most popular here in Highland is the honey sweet pork. All the food is cooked from scratch every day." Their specialty is burritos but they offer them many ways such as with a tortilla, or in a burrito bowl or as a burrito salad on a bed of fresh romaine lettuce. Each burrito is made to order with ingredients the customer chooses such as cheese, salsa, sour cream or lettuce with guacamole extra. Their unique side dish is cilantro lime rice which is tart and tasty. Each meal comes with the choice of rice, fajitas, black or pinto beans. Prices range from $1.50 for a quesadilla to $6.50 for a steak burrito. Kids' meals are $3.95 and include a cheese quesadilla or taco, carrots, juice and crackers. They also serve breakfast with a choice of breakfast burritos bur-ritos or bowls with skillet potatoes, po-tatoes, meat, fajita vegetables and cheesy scrambled eggs.
