Salt preserves the meat, the sugar or sirup improves the flavor fla-vor and the saltpeter sets the red color. For dry cure, about half of the curing mixture Is rubbed on the meat at the beginning be-ginning of the cure, and the other half rubbed on five or seven days later. Or the second half may be divided with part added about five days after the first application, and the final fourth, six days later. Pork should be left in the cure about two days per pound of each piece for a minimum of 25 days. Bacon will dry cure in from 14 to 30 days. Cleanliness, prompt and proper chilling and proper storage at near freezing temperatures during the chilling process are other points essential for first-class cured pork. Seaman Ohran has spent the past week home on furlough. Dear Mr. Gaisford: I have Just completed reading the last issue of the 'Citizen" so would like to write a few lines to express my sincere aD- preciation for the wonderful atmosphere at-mosphere in your column "With Our Boys". I I am sure I speak for every boy from American Fork who has the privilege of reading the paper pap-er when I say it is a great morale builder as well as giving a spark of hope and understanding when we read the news of our friends who are doing all in their power to bring peace and contentment back to the world. I have been separated from many of my friends and through your special column, devoted to the boys, have been able to keep in contact with them and their doings. Have been in the army 17 months, stationed at Camp Bark-ley Bark-ley all the time. I work in the postoffice hero in camp and it is surprising the number of newspapers that come in each day and just about all of them have a column devoted to the boys In the service.
