Cowlxiy poets Sam Deleeuw and In Kennington will have the audience chuckling with his stories of humor and history. CATHY ALLREDNorth County Sarah Pettit, Miss Pioneer Valley from Herriman, was crowned Miss Utah County 2007 on Friday and will represent the area at the Utah County Fair which opens today at 4:00 p.m. at Thanksgiving Point and runs through Saturday. The air conditioner has broken only to be found out upon returning home from church. So, yes as it i.s Sunday the repair shops are closed and there is not much we can do. My husband is a fix-it -yourself kind of man, he has looked at every part and checked out every thing but there i.s not much he can do at this rate. So as I am writing to you today I am half way undressed and my "oven" that i.s always turned on "cooking" our baby i.s now on broil. With any luck the baby will be done sooner than later at this rate. I was planning on making a great plate of oven-fried chicken for dinner today, but now it is just a dream away. I will not be heating the house with the oven, as I want us all to live to see tomorrow. So, I will have to ask my husband to stand outside in the 100-pIus degree heat and axjk us something some-thing on the barbecue grill. I Ie will probably be grateful, as it i.s most likely cooler outside than in. So, as I am not able to cook my chicken today I will let my mouth water as I share this amazing recipe with you. Today in a society where everyone is counting calories and watching their weight this recipe will hit home for many. With traditional fried chicken having 552 calories, 34g of fat and l()g of saturated fat this new recipe will be much healthier for your heart and your waist line with only 216 calories and 9g of fat. You will love the flavor and the ease of having grease-free cooking. If you are short on time, think about making this the night before. All you will need to do i.s place your chicken, buttermilk, mustard, salt, garlic powder, black pepper and hot sauce in a bowl and place in refrigerator. In a large Ziploc bag place all other dry ingredients. Then all you have to do the next day is heat the oven, toss your crumb mixture with oil, coat the chicken and bake. Contact me at emilymarlowefs connect2.com. 3tR3C7 Oven-Fried Chicken 2 cups buttermilk 1 2 tablespoons Dijon mustard 1 2 14 tsp salt 1 12 tsp garlic powder 1 12 tsp black pepper 1 1 tsp hot sauce 1 8 pieces of bone in chicken, skins removed 1 2 12 cups crushed corn flakes (to crush cornflake crumbs place them in a Ziploc bag and use a rolling pin) 1 34 cup fresh breadcrumbs torn finely 1 12 tsp ground poultry seasoning 12 tsp paprika 1 18 tsp cayenne pepper 1 2 tablespoons vegetable oil Whisk buttermilk, mustard, 2 tsp salt, 1 tsp garlic powder, 1 tsp black pepper, and hot sauce together in a large bowl. Add chicken turn to coat well, cover and refrigerate at least one hour or over night. Adjust oven rack to upper-middle position and heat oven to 400 degrees. Line a rimmed cookie sheet and coat a cooking rack with cooking spray. Gently toss corn flakes, bread crumbs, remaining 12 tsp garlic powder, remaning 12 tsp black pepper, remaining 14 tsp salt, poultry seasoning, paprika and cayenne pepper in shallow dish until combined. Drizzle oil over crumbs and toss until well coated. Working Work-ing with one piece at a time, remove chicken from marinade and dredge in crumb mixture firmly pressing crumbs onto all sides of the chicken. Place chicken on rack. Bake for 35 to 40 minutes or until juices run clear. Note: If you like your chicken a little spicier increase hot sauce to 1 tablespoon. Replace 14 tsp salt in crumb mixture to 12 tsp chili powder and increase cayenne to 14 tsp.
