It is an artistic endeavor en-deavor that affords the opportunity oppor-tunity to share fun and beautiful as well as tasty creations with loved ones and friends. Those intrigued by the prospects cf holiday candy making should make it a point to check out Shepherd's Cake & Candy, 1700 North State, Provo (just down the Provo-Orem hill). Not only does the store stock everything one could need supply-wise, but Shepherd's also offers of-fers free classes sharing know-how know-how and good advice for beginners begin-ners and experts alike. Store owner and class instructor in-structor Elaine Shepherd said there will be two more classes featuringideas for Halloween October 18 and October 25 --then --then there will be a break before five Christmas classes begin. Supermarkets Super-markets often buy in bulk, and are able to offer the blocks at a low price, but the chocolate may have a whey product added, or use a low quality bean to achieve the cheaper price. Shepherd's stocks only high quality dipping chocolate. Another tip is using a heating heat-ing pad set on low to keep the chocolate at the right dipping consistency. Bowls and containers con-tainers are simply placed on the pad. Chocolate can even be melted overnight by placing the blocks in a stainless steel bowl with a towel over it, and letting the low heat melt it gradually. The proper use of oil or water-based flavorings and colorings is discussed in the clas ses. Incorrect use can create problems in getting candy to properly set up. Parchment paper is recommended in candy making, rather than waxed paper, for better handling. Mrs. Shepherd demonstrates how to paint and handle the candy molds to produce colorful suckers and other specialties like peanut butter cups. There are ideas for making "gourmet" caramel apples, ap-ples, dipped first in caramel, then partially dunked in white chocolate, and topped with cinnamon cin-namon sugar, chopped almonds, drizzled dark chocolate, or seasonal sprinkles. Popsicle sticks, rather than round wooden sticks, were suggested for caramel apples because they tend not to loosen and fall out as easily. Another popular idea was to take a 6-7 inch pretzel, wrap it in caramel, dip it in chocolate, and finish if off with Halloween sprinkles. After setting up in the freezer, the treat can be placed in a cellophane bag and tied off with a ribbon for a festive and delicious goody. There are ideas galore in the candy classes, and confirmed chocoholics learn they are not alone. "Christmas is a big season for chocolate in Utah County," Mrs. Shepherd said.
