Try cottage cheese. It's the basis for all the molded salads shown here, and it's sure to win special applause for you as a creative and imaginative salad artist. Why not surprise your guests with a tray full of individual and varied salads such as these. They're especially gratifying to weight-watchers. Molded Pineapple Cheese Salad 6 individual molds or 1 8 inch mold 1 envelope lemon flavored gelatin '' 1V4 cups boiling water ' H cup pineapple juice cup cottage cheese cup crushed pineapple, drained t tablespoons chopped maraschino mara-schino cherries t tablespoons chopped nuts Soften gelatin in boiling water. Add pineapple juice and chill un-til un-til slightly thickened. Stir in cottage cot-tage cheese and pineapple. Add cherries, nu's or both if desired. Pour salad in an oiled mold or individual molds and chill until firm. Unmold on lettuci leaves or other greens. , Cottage Cheese Salad Ring 1 8 inch ring mold 2 tablespoons plain, unfavored gelatin H cup cold water 2 pounds cottage cheese 1 cup milk 2 tablespoons lemon juice 1 teaspoon onion juice teaspoon paprika teaspoon salt Soften gelatin in cold water; dissolve over hot water. Mix cottage cot-tage cheese, cream, lemon juice, onion juice, paprika, and salt; add dissolved gelatin. Turn into a fing mold or individual molds that have been rinsed with cold water. Chill until firm. Unmold on crisp salad greens. Chopped chives, watercress, or green pepper may be added for color. Molded Cottage Cheese 1 8 inch ring mold 1 tablespoon plain gelatin Va cup cold water ... 2 cups cottage cheese teapoon salt teaspoon paprika Vt cup cream Y cup crumbled Blue cheese 3 stuffed olives Vt cup chopped nut meats Soak the gelatin in cold water; dissolve over hot water. Beat the cottage cheese, salt, paprika, cream, cheese, olives, and nut meats until smooth. Add the cooled gelatin. Pour into a wet 8 inch ring mold or individual molds. Chill until it is set. Unmold Un-mold on lettuce and fill the center cen-ter with fresh fruit or vegetable salad.
