Few Westerners know exactly how to prepare the true Quakers dish. We have a few suggestions which might help. The best pieces of corned beef are the rattleran and fancy brisket. The fancy brisket commands a higher price and may easily be told from the rattleran by the absence of bones. The upper end of the brisket bris-ket is thick and composed mostly of lean meat; the middle cut has more fat but is not well mixed, while the lower has a large quantity of fat. The rattleran contains a thick lean end: the second cut contains three distinct layers of meat and fat and is considered the best cut by those who prefer meat well streaked with fat. New England corned beef is grayish brown. Other corned beef fa cored with a much larger amount of salt peter and is red. To cook: Wipe and tie securely in shape, if not done at market. Put in kettle, cover with cold water, and bring slowly to boiling point. Boil 6 minutes, remove scum, reduce heat, and simmer until tender. Cool slightly in wateT in which it was cooked. Remove to dish, cover, and place a weight on cover, that meat may be well pressed, or separate lean meat and fat and put in alternate layers in a bread pan, cover arid press. Serve warm, impressed or pressed corned beef with cabbage, 8 beets, 8 turnips, 8 carrots and 8 potatoes. Remove meat from water, skim off fat, and cook vegetables (except beets) in this water. Cook beets separately. All vegetables may be cooked separately if preferred, but turnip, if small, may be cooked whole; if large, cut in pieces. Serve cabbage and beets in separate dishes, or other vegetables attractively attrac-tively arranged on platter with meat. Serve with Horse-radish Sauce. Youll agree that it will be one of your favorite dishes before too long too. DTR Timp Soil District Offers Services For Flood Control Dale Schott of the Timnanog-os Timnanog-os Soil Conservation district re ports that numerous land owners own-ers have recently contacted the district board asking how emergency emer-gency flood assistance could be obtained. They are anxious to know what can be done in advance ad-vance to alleviate or minimize a serious flood hazard. Georee M. HinckW of Provo. vice-chairman of the Timoano-' gos district, has rerred rhat the district Is offering its assist ance to any flood control organization organ-ization in preparing for a flood emergency. He states that the board is offering its available heavy equinrnent and anv other resources it has available.
