Little did I realize, that's an obscure reference. I was surprised to find that this most basic of foods is hardly a household name. To clear things up, polenta is simply commeal, water, butter, salt and pepper. Its nearest cousin is grits; the difference is grits uses hulled white corn, polenta uses yellow com meal. Further, and contradicting my reference, polenta comes in a variety of consistencies. It can be served, like grits, as a pile of mush, or it can be made into a firm loaf for pan-frying. The latter method is my favorite, and it's the one I'll detail here. The process is simple. Start by boiling five cups of water. Bring the water down to a slow simmer and slowly whisk in one and a quarter cups of coarse yellow corn meal, taking three to four minutes to add all the corn meal. Lower the heat some more and cook the mixture until the meal is softened. Stir in about one Eat... cuisine for commoners tablespoon of butter. When this is done, pour the mixture off into a well-greased--using butter-pan, either a small casserole dish or a small loaf pan. Place the polenta in the refrigerator until chilled. When you're ready to use it, place the dish in a hot oven just long enough to melt the butter you used for greasing; the polenta will come right out when you flip the pan. From here, you can get creative. Plain polenta is quite bland, but pan-fried polenta makes an excellent alternative to side dishes such as pasta, potatoes or rice. Use whatever oil or grease you prefer, but keep in mind polenta on its own is quite healthy and low-calorie-bacon grease will ruin that. I recommend spreading crushed garlic on the slices before frying, cooking them in a mixture of olive oil and butter, and sprinkling them with fresh basil. The polenta should be fried until golden brown on each side; the center will be soft. Polenta keeps quite well for a few days in the refrigerator, and pan-fried slices can be reheated easily in the oven. As this is a most basic food, serving suggestions are limited only by your imagination. Firm Polenta For this recipe you'll need to gather: five cups of water two tablespoons of butter one and a quarter cups of coarse yellow corn meal salt and pepper Then: Bring water to a slow simmer. Whisk in cornmeal over a four-minute period. Turn down heat and simmer about ten more minutes, until tender. Stir in one tablespoon of butter.
