It prevents millions of Americans from taking part in many of the pleasures of life. Forget about food, Sorenson Soren-son says. Make eating unimportant. unim-portant. Focus your attention atten-tion on something much more rewarding physical activity. This is the message he delivers to the hundreds of men, women and children attending his National Institute In-stitute of Fitness (NIF) each summer in Park City. Sixty to 80 persons at a time most in varying stages of obesity attend the week-long week-long sessions. Many stay for two, four or even twelve weeks. Unlike most Americans who view vacations as their time for indulgence and immediate gratification, NIF participants par-ticipants come here to change pleasure-seeking habits from eating to physical fitness. Sorenson, who holds a doctorate doc-torate in physical education from Brigham Young University, has first-hand knowledge of obesity. Print Ink western Utah eating rich red meats and gravy and sometimes consuming 12 to 18 eggs a day. At the age of 22 he weighed in at 250 pounds. A diet heavy in the complex com-plex carbohydrates, low in protein and centering on what he calls Vitamin X exercise brought his weight down to 165 to 170. In his 20s he became an athlete, running marathons, becoming the top-ranked racquetball player in Utah and riding a bicycle from Phoenix to Fairbanks, Alaska. An admitted food addict, Sorenson found the key to being thin lies in being in continual motion, and by removing tempting foods from his life. And that's the plan he inspires his NIF participants par-ticipants to adopt. One three-year participant in the program is Kay Jackson, now the NIF business manager. She joined the program at 254 pounds on a five-foot, one-inch one-inch frame. What did it feel like? "Horrible," Jackson said. "It's hard to breathe, hard to walk, hard to function, it was miserable." After weighing 100 pounds all through high school, she started putting on weight around the age of 25, after trying out several fad diets. "I would lose a little, then gain it all back, plus some," she said. "I was a compulsive com-pulsive eater, and with activities ac-tivities like Girl Scouts and PTA, I was constantly exposed ex-posed to food." On the NIF plan, she learned lear-ned that "you can't succeed at losing weight without exercise. If you don't exercise, exer-cise, you should not eat." And the key to exercise, she and Sorenson agree, is getting it in before anything else before the activities of the day begin. That may mean getting up at 4:30 or 5 a.m., whether you're tired or not. It's this type of routine that Sorenson sets up for NIF participants with brisk walking as the chief activity. The day begins at 6 a.m. with warm-up stretching exercises exer-cises in the Prospector gym. Walking follows until 7 a.m., then Jackson leads a dan- cercize class to music. After that, everybody walks uptown up-town to Shannon's Restaurant, leased for the summer season for NIF use only. The Institute has its own chef, Julie Bride from Edmunds, Wash., also a participant par-ticipant in the program. Breakfast is cereals-wheat, cereals-wheat, oatmeal or Grape Nuts, with fruit and vitamins, vit-amins, but no coffee or tea. At the restaurant, everybody packs a lunch, with a small portion of tuna or turkey, fruit, and fresh raw vegetables. Dinner is high in the complex carbohydratesbeans, car-bohydratesbeans, peas or potatoes and low in lean proteins, such as chicken or fish.
