Show 1; t -4 i '4 l: . 1 i ; t Kitchen Kapers Four pasta dishes for a late spring , Mary Ella Arnold While we are STILL wondering every day if our gardens are going to become water-logged or if our tomatoes and geraniums are going to freeze, it's still cool enough on the outside that we can bake something in the inside. Maybe you'll enjoy these recipes for Lasagna and Stroganoff. LASAGNA, ITALIAN STYLE lean ground beef, 1 lb. cottage cheese, VH small carton small curd . ' Mozzarella cheese, 1 lb. onion, 1 med. tomato sauce, 8 oz., California style tomato soup, Italian style, 1 can water, 1 soup can 2-3 T. Lowry's spaghetti sauce mix . 6 cups wide noodles Brown ground beef and onion. Add the tomato sauce and the soup, water and sauce mix. Simmer for a couple of minutes. In a large casserole (I used a ten inch square one that was four inches high and it worked perfect) that has been oiled layer noodles, cottage cheese, Mozzarella cheese, ground beef mixture. End with the ground beef mixture on top. Cover with foil and bake 1 hr. at 350 degrees. If you use a glass dish lower the heat to 325 degrees as glass containers absorb and hold the heat better but sometimes will burn your product. Two tablespoons of the spaghetti sauce will be quite mild so if you like a little stronger taste use the three. The Lowry's seasoning is milder in flavor than Schilling. I like the blend of spices better, but you may want to use your preference. The California style tomato sauce has garlic, onions and some spices in it; the same with the Italian style tomato soup. Easy Lasagna You butter the bottom of your own , desired size casserole dish and line with a layer of wide cooked noodles , or Lasagna noodles if you wish. Add a variety of cheeses such as Mozzarella, Moz-zarella, Cheddar and Monterey Jack. Spoon or sprinkle a layer of spaghetti sauce mix or spaghetti sauce over cheeses. If you use the dry sauce mix then spread with tomato sauce. Do this three times, topping with Mozzarella cheese. Bake at 350 degrees for 30-45 minutes or until heated through good. VEGETARIAN LASAGNA noodles, wide or lasagna, 6 oz. spinach, 1 lb. grated carrot, 1 cup mushrooms, 1 small can, drained onion, cup chopped margarine, IT. tomato paste, 1 small can tomato puree, 1 large can oregano leaves, 1 tsp. crushed 1 tsp. salt, optional 1 tsp. basil 2 cups cottage cheese, small curd egg, 1 beaten Monterey Jack cheese, 2 cups grated Cook noodles in boiling water for 10 minutes. Drain. Cook spinach in saucepan with no water. There will be enough moisture on the spinach from washing. Cook over a medium heat for 3-4 minutes. Drain well. In a fry pan with the margarine saute' carrots, onion, only until tender. Add the puree, paste, the salt and spices. Combine the beaten egg with the cottage cheese. In an oiled cake pan, 9" x 13", layer half of the noodles, spinach, the sauce with the tomato products, the mushrooms, and cottage cheese. Top with 1 cup cheese. Then repeat the layering process again topping with the remaining cup of shredded cheese. Bake for 30 minutes in a 375 degrees oven. Let stand a few minutes to set before serving. The mushrooms are optional. You may want to use fresh ones. If you do saute' them with the vegetables. John Lewis Davies Sr. Local FHA wins honors The Springville High Future Homemakers of America Chapter recently returned from the state convention held at Brigham Young University. For the first lime ever the Springville chapter earned the Four Star Chapter award. To qualify for this a club must reach several "goals in the following four areas: leadership development, impact projects, individual growth, and chapter growth. Other awards were as follows: Mara lee Bate was chosen as one of the new state officers, Peggy Pickering is now a member of the state peer education team and Leslee Nelson received the new Horizon award. Jancie White was the recipient of the region scholarship A special award, The Unlimited Potential Award," was given to the officers and advisor for their efforts in building the club and accomplishing their goals. Awards were given to the following girls for outstanding performances per-formances in the proficiency events: Foods event Jill Fazzi, Mane Higgins, Myra Richmond, and Wendy Killpack all received superiors, with Teresa Ith taking excellent. ex-cellent. He is the youngest of 11 children born to his parents. He observed the occasion with his wife, Erma, and eight of their living children at a party held in his honor on Saturday, May 1. Valene and George Stannard of Las Vegas, Marilyn D. Richardson of St. George and Ralph and Veneta D. Jenkins of Chellis, Idaho travelled farthest to attend the party. Also attending were David Leroi and Jana Lee Whiting Davies of Ogden, John Lewis and Lila Brailsford Davies of Mapleton, Donald Leon and Nada Oliphant Davies of Mapleton, Keith Nielson and Louise Olsen Davies of Alpine and Lorin Peter Sr. and Elizabeth Olsen Davies of Springville. All the above are children and spouses of children of Mr. Dvavies. Their mother is Emma Veneta Nielson Davies, who died six years ago. Mr. Davies has 55 grandchildren and 40 greatgrandchildren. great-grandchildren. Mr. Davies is the son of Thomas Davies Jr. and Mary Ann Cooper, and was born May 3, 1902 at Spring Coulee, Alberta, Canada. Mr. Davies grew up on the open prairie of southern Alberta. He spent a year in the U.S. Navy at the age of 17, later farming in Alberta and Idaho. He worked some years for the railroad in Ogden, freighted with horses and trucks until 1948, when he joined Geneva Steel Co., where he worked until his retirement in 1965. Mr. and Mrs. Davies spent V-k years as missionaries for the LDS Church in Indiana and Michigan, and currently serve as workers in the Provo LDS Temple. I'll have a fling. Build castles in the air.
