Show pBfrtpny' HomeCookin' By Angie Martin I have gathered a few more of my favorite appetizers, particularly some appetizer bars and sticks that may be used as appetizers or served with soups or salads. Keep the little peppery pep-pery hot sesame sticks on hand in the freezer packed in an airtight tin to protect pro-tect their shape, or you may wish to add these to a cookie tray for a surprising surpris-ing variety from sweet choices. Topped with a whole wheat pastry, the marvelous chicken pie is a meal itself. Add a tomato salad, then serve ice cream or a fruit sherbet for dessert. And after cooking the chicken you will have rich, home-made broth to freeze and use later. Serve the orange bread with soft cream cheese or cottage cheese and with a fruit salad for a summer lunch. Or serve it with orange marmalade or strawberry jam for a break or snack. I have had a request for chocolate zucchini cake and the recipe included is from Linda Murray. She made this for all the folks at our office and it is one of the best I have had. RAISED ORANGE BREAD About 2 cups unbleached all-purpose flour xk cup sugar tsp, salt Vi tsp. baking soda 1 pkg. dry yeast 1 Tbsp. grated orange peel (fresh) 1 cup orange juice 2 Tbsp. butter or margarine Melted butter or margarine, optional : In medium bowl, mix 1 cup flour, the sugar, salt, baking soda, yeast and orange peel. Heat orange juice and butter just until warmed (butter need not melt). Add to dry ingredients. Beat at medium speed for 2 minutes. Add cup more flour. Beat at high speed for 2 minutes. Stir in enough more flour to make a soft dough. Turn out, punch down and knead dough for 5 minutes until smooth and elastic. Put in greased bowl, turning to grease top. Cover lightly and let rise in a warm place for one hour or until doubled in bulk. Punch dough down. Roll into a rectangle and fit into greased greas-ed 8x4-inch loaf pan. Bake at 350" for 30 to 35 minutes or until well browned. brown-ed. Remove to wire rack and brush with melted butter. Cool completely Makes 1 loaf. ' For a smooth-topped, even loaf of bread, use a rolling pin and roll dough into an 8x4-inch rectangle. Beginning with upper short end, roll dough forward. for-ward. Put seamside down in greased pan. CHICKEN, HAM AND MUSHROOM PIE 1 frying chicken (3' lbs.) cut up 1 medium onion, finely chopped 1 medium carrot, sliced 1 stalk celery, coarsely chopped 2 tsp. salt Vt tsp. dried thyme leaves 3 cups water 'i cup diced ham lk. lb. mushrooms, thinly sliced V cup butter or margarine 3 Tbsp. all-purpose flour Dash each pepper and nutmeg Vt cup thawed frozen peas Place chicken pieces in kettle. Reserve V4 cup of the onion ; add remaining remain-ing onion to chicken with carrot, celery, salt, thyme and water. Bring to boiling and reduce heat. Cover and simmer until chicken is tender, about 45 minutes. Strain, reserve broth; skim and discard fat. Bone chicken in large pieces, removing skin. Cook reserved onions, ham and mushrooms In butter in a saucepan until un-til mushrooms brown lightly; stir in flour, pepper, nutmeg and remove from heat. Mix in 1'4 cups broth. Return to heat; cook, stirring until thickened. Fold in chicken and peas. Spread chicken mixture in 9-Inch pie pan. Place pastry over filling; trim and flute edges. Cut slits In top. Beat egg white with 1 Lsp. water, brush crust and bake at 425' about 25 minutes. Makes one pie, 6 servings. Whole Wheat Pastry: Mix cup all-purpose flour, U cup whole wheat flour, and 4 Lsp. salt. Cut in 4 cup firm butter or margarine and 2 Tbsp. grated Parmesan cheese until crumbly. Mix in I egg yolk (reserve white), I tsp. lemon juice, and about Vt Tbsp. water. Blend until mixture clings IngrtJxT. Parmesan cheese 4 Tbsp. sesame seeds , Cream butter, add flour, cayenne, salt and oregano. Mix until butter is completely blended into the flour mixture. This may be done in the food processor using the steel blade. Blend in the egg and work dough with hands, or process until mixture looks like cookie dough. Add the Parmesan cheese and blend in well. Di vide into quarters. Divide each quarter into halves and roll out to make a long, finger-thick strand on a surface that is sprinkled with sesame seeds. You may also want to sprinkle some additional seeds on top. Strands should be about 8 inches long. Divide each strand into 6 pieces, making a dozen pieces from each quarter of dough; four dozen in all. Place on ungreasd cookie sheet. Bake 400 for 12 to 15 minutes or until pale golden. Serve hot or at room temperature. Makes 48 hot sticks. SALMON APPETIZER 1 can (16 oz.) canned salmon 1 pkg. (8 oz.) creamed cheese, room temperature 1 Tbsp. lemon juice 2 tsp. grated onion Dash salt xk tsp. liquid smoke, optional Va cup finely chopped pecans 4 Tbsp. chopped parsley (fresh) Chopped green onions or sliced green pepper, optional Crackers and sliced tomatoes, optional Drain salmon and remove skin and bones. Flake salmon and combine salmon with the cream cheese, mashing together with a fork until blended. blend-ed. Stir in lemon juice, onion, salt and liquid smoke, if used. Mix well . Add pecans and 1 1 bsp. of parsley until well combined. Transfer to serving dish. uuu 10 uiena navors. apnnKie wun parsley or sliced green onions belore serving. Or shape into a 2-inch high loaf. Wrap tightly with foil and place in freezer for 24 hours. Before serving, defrost in the refrigerator for 2 to 3 hours and top loaf with remaining chopped parsley, green onions or green pepper, if desired. Serve with crackers of your choice, sliced tomatoes and green peppers, if desired. Makes va euns din - .... - i r . , LIlUtULATK ZUCCHINI CAKE V2 cup margarine lk cup oil 1 cup sugar 2 eggs 2 cups grated zucchini 1 tsp. vanilla Vz cup sour milk 4 Tbsp. cocoa 1 tsp. salt 1 tsp. soda 1 tsp. baking powder 2'2 cups all-purpose flour Beat together margarine, oil and sugar until well blended. Add egg one at a time and beat until light. Add zucchini and vanilla. Sift together nma. cinnamon, salt, soda, baking powder and flour and add alternately w i:h the sour milk. Pour batter into a greased and floured 9xi:i inch baking pan and sprinkle with the following topping (combine ingredients): 34 cup chocolate chips cup brown sugar 34 cup chopped nuts Rake cake at 350 for 40 to 43 minutes, or until tester comes out elegit !
