Fridoy, Morch s, 1985 Yemal Express 3 Obituaries Tommy Hacking dies of cancer Tommy O'Donnell Hacking, 54, of Vernal died of cancer March 6, 1985. Born Nov. 19, 1930 in Vernal, he was a son of John Clyde and Cora Abigail Burgess Hacking. He married Dixie Blackburn, Sept. 8, 1955 in Vernal. He was a saddle maker, veteran of the Korean conflict, served in the Cub Scout Program and as a Scout Master. Survivors are his wife of Vernal; a son and two daughters, Mrs. David (Jamie) Swett of Vernal, Mrs. Tim (Julie) Woolstenhulme of Oakley, Utah, Matt B. Hacking of Vernal; three grandchildren; parents of Vernal; Ver-nal; brother, John Arden Hacking of Vernal; and sister, Mrs. Terrell (Jennie Lee H.) Coy of Rangely, Colo. Funeral arrangements will be Saturday, March 9, at the Vernal 5th Ward Chapel. When chicken is just tender, in about 20 minutes, turn off heat and let sit 30 minutes to absorb flavors. Remove chicken, discard skin and cut meat into bite-size pieces. Reserve. Return bones to pot, simmer 30 mintues longer. Strain and degrease the broth. Add salt and pepper. Meanwhile, simmer rice in 2 cups lightly salted water for 20 minutes; puree in a blender with 2 cups of the chicken-cooking broth. Drop the peas into boiling water and cook just until tender; refresh in cold water and drain. Peel and seed cucumber; cut into in-to julienne (match-size pieces); salt lightly. Bring chicken broth to simmer with the chicken, rice pureee, peas and cucumbers. Stir in V3 cup (or more) of sour cream, season and ladle into warm bowls. Serves 6. SPLIT PEA SOUP Vk cups green split peas 1 large onion, chopped 2 celery stalks, chopped 1 large leek, chopped 1 large clove garlic, halved Herb bouquet made of 3 cloves of garlic, 4 allspice berries, 2 bay leaves, 1 tsp. thyme and 8 sprigs of parsley tied in a cloth 1 or 2 ham hocks Salt and pepper Toasted croutons, tiny sauteed pork sausage balls for garnish (optional) Pick over the peas and remove any stones, etc. Wash and drain peas. Place in a 4 quart pan with the vegetables, herb bouquet, ham hocks and Vk quarts of water. Bring to simmering. sim-mering. Skim for several minutes, until un-til scum ceases to rise. Cover loosely and simmer about Vk hours or until peas are tender, stirring occasionally in case they are sticking to the bottom of the pan. Discard bones and herb bouquet. Either puree through a vegetable mill or for a creamy effect, puree in a food processor then pass through a seive. Season with salt and pepper.
