Show HomeCookin' By Angle Martin A little bit of this and a little bit of that. I hope you find something you like in this collection of recipes. I have a special chicken saltimbocca. This traditional Italian dish is called Saltimbocca alia Romana and is made with veal, proscuitto ham, fresh sage, and white wine. Here I have given the poor man's answer to it (and a delicious one, you'll treasure this recipe). Also, a quick quiche made in your microwave and for a very special friend, my favorite hot buttered rum, made in a microwave. (Or you can r make it on top of the stove.) Some other elegant and quick desserts are included. CHICKEN SALTIMBOCCA 3 whole chicken breasts, skinned, boned and halved 6 wafer-thin slices boiled ham (about IW x Vk") 6 slices Mozzarella cheese, about 3 inches long, iy2 inches wide and lA inch thick 1 medium unpeeled tomato, cut in very small pieces xk tsp. ground sage Va cup fine, dry Italian-style bread crumbs 2 Tbsp. grated Parmesan cheese 2 Tbsp. dried parsley flakes lk stick (Vt cup) butter or margarine, melted Cream Sauce (optional) Place chicken, boned sides up, on cutting surface. Place a piece ofplastic wrap over each piece of chicken. Working from center out, pound chicken lightly with meat pounder to flatten each piece to a square shape, about 5"x5". (They won't be perfect squares, but don't worry about that. Use your fingers to press chicken into shape and push together any tears.) The chicken pieces also can be flattened with a rolling pin: cover them with plastic wrap and roll from center out. Place a slice of ham on each piece of chicken. Place a slice of Mozzarella cheese in center of ham. Sprinkle cheese with some of the tomato pieces and sage. Bring sides of chicken up and over filling, jelly-roll style. Firmly tuck in all ends, pressing them together to seal well. (If filling starts to fall out, just tuck it back in. There is no need to use skewers to fasten seams if they are firmly pressed together.) Combine crumbs, Parmesan cheese, and parsley. Dip chicken rolls in melted butter or margarine, then roll in crumb mixture until thoroughly coated. (Hold them firmly while rolling in crumb mixture. If they come apart, just press back together.) Place rolls, seams sides down, in greased, shallow, close-fitting baking dish. (Their sides should touch.) Bake, uncovered, in oven preheated to 350 about 45 minutes or until golden brown. Serve plain or with Cream Sauce, if desired. Rolls may also be sliced and served cold as hors d'oeuvres, speared with wooden picks. 6 servings as a main dish. Cream Sauce: 2 Tbsp. butter or margarine 2 Tbsp. flour 1 cup half-and-half Salt to taste Va tsp. nutmeg, optional 2 tsp. lemon juice Melt butter or margarine. Add flour. Stir a few minutes over moderate heat and gradually add cream. Cook over moderate heat, stirring constantly, constant-ly, until thickened. Add salt, nutmeg and lemon juice. Mix well. Makes about 1 cup of sauce. Give each guest a spoon for stirring the butter and mace into the drink, Friday, March 2, 1984 Yefflal ExpfBSS 5 MICROWAVE CALIFORNIA QUICHE 2 cups grated Monterey Jack cheese 9 strips bacon, crisply cooked and crumbled 1 4-oz. can diced green chilies 3 green onions, thinly sliced 1 baked 9-inch pie shell 1 13-oz. can evaporated milk (regular or nonfat) 4 eggs Combine first four ingredients in small bowl and toss lightly. Sprinkle about of mixture over pie shell. Heat milk in measuring cup on high for 2 minutes. Beat eggs in separate bowl. Add hot milk and beat again. Pour evenly into pie shell. Sprinkle with remaining bacon mixture. Cook on Bake (60 percent power) until center is barely set, about 12 to 15 minutes. Let stand 5 minutes before serving. 6 servings. I For cake: Preheat oven to 350' F. Butter 9x13 inch baking dish. Com-j Com-j bine all ingredients in large bowl and blend well. Turn into prepared dish j and bake until cake tests done, about 1 hour. Cool. I For frosting : Combine remaining ingredients and mix to spreading con-I con-I sistency. Frost cake. I BANANAS WITH ORANGE SAUCE j 3 to 4 firm bananas j 1 6-oz. can frozen orange juice concentrate, partially defrosted j Fresh mint for garnish, optional j Peel bananas and slice into serving bowl. Pour orange juice concentrate j over bananas and toss to coat each slice. Remove remaining concentrate into chilled bowl to pass separately. Serves 4 to 6. BAKED APPLE DESSERT 6 tart apples, peeled, cored and sliced 2 Tbsp. fresh lemon juice 2 Tbsp. cinnamon 1 18V2 oz. pkg. yellow cake mix Ms cup melted butter 1 cup chopped walnuts Vanilla ice cream Preheat oven to 350". Grease 9x13 inch baking dish. Combine apples, lemon juice and 1 Tbsp. cinnamon in large bowl and toss well. Spoon evenly into dish. Sprinkle cake mix over apples, patting gently. Dust with remaining remain-ing cinnamon and drizzle butter evenly over top. Sprinkle with nuts. Cover with foil and bake until apples begin to bubble, about 15 to 20 minutes. Uncover Un-cover and continue baking until top is browned and apples are tender, about 30 minutes. Serve warm or chilled, topped with ice cream. 10 to 12 servings. Holly 's Hints by Holly Baker Uintah County Home Economist ONE-BOWL APPLE CAKE WITH CREAM CHEESE FROSTING 1 16-oz. can apple pie filling 2 cups all purpose flour 2 cups sugar cup vegetable oil 2 eggs 2 tsp. cinnamon 2 tsp. baking soda 1 tsp. salt Frosting: 1 cup powdered sugar 1 3-oz. pkg. cream cheese, room temperature V cup (lk stick) butter, room temperature 1 tsp. vanilla I One of the first items to become suspect when trying to economize is the food dollar. The food budget generally has some built-in flexibility, while most other expenses are somewhat set and cannot be manuevered as easily. The cost of food is not proportional to nutritive value, but the money spent for food ought to be protected to insure adequate nutrition nutri-tion because of the implications for future health and well-being. Many people are really not aware of the exact amount of money they are spending for food. Others keep a record of money spent at the grocery store. The grocery store expenditures may not reflect food expenses unless household goods, pet food and other non-food items are eliminated. It is also important not to forget meals eaten away from home and money spent for snacks and other edible products. Even though food prices have increased in-creased significantly over the last few years, incomes have also risen so that the percentage of disposable personal income spent for food remains between bet-ween 16 and 17 percent. After World War II, the family grocery bill was about 25 percent of take home pay. What can you do to get the most for your food dollar? Planning is an important im-portant prerequisite to making decisions deci-sions to economize. Menu planning is a basic step. The following questions should be considered in menu planning: plann-ing: 1. Does it meet the nutritional requirements re-quirements of my family? 2. Does the cook have the time and skills to prepare the foods? 3. Will your family fami-ly eat and enjoy the foods? 4. How does the price compare to other foods that could be substituted in the meal? ' Good shopping skills are important in economizing on food. It is important to be informed on food costs and make a decision based on your own personal situation and values. The high cost items logically should be the items for first attention. Since high protein foods purchased are approximately one-third one-third of the total money spent, this provides pro-vides a good beginning point.
