Chicken Algerian 2 broiler-fryer chickens, cut 2 cans (8 ounces) tomato sauce into serving pieces 1 teaspoon dried leaf thyme 2 teaspoons salt 1 teaspoon dried leaf basil Paprika V2 teaspoon Tabasco V3 cup diet margarine 2 medium eggplants, peeled 2 medium onions, chopped and diced 2 cloves garlic, minced Sprinkle chicken pieces on both sides with salt and paprika. Heat margarine in very large skillet or Dutch oven; add chicken pieces a few at a time and brown on both sides. Return chicken pieces to skillet with onion and garlic. Mix together tomato sauce, thyme, basil and Tabasco; add to skillet. Simmer, covered, 15 minutes. Add eggplant and cook, covered, 10 minutes longer or until chicken is tender. If desired, serve sprinkled with chopped chop-ped green pepper. YIELD: 8 servings. 300 calories each. |
