Now the jobbers of notbem Utah pay out an immense sum of money to California Cali-fornia every year for what is known as evaporated fruits, but which to the certain knowledge of the writer is simply a sun dried fruit and treated by a process of Sulphur: the writer has also al-so seen some samples of fruit from the neighborhood of St. George which have been treated in this manner, and which appears to be fairly satisfactory provided provid-ed there was a little more uniformity in the treatment. The packing- is an other important item, no provision evi dently having been made in southern Utah for the packing of this sulphured fruit except in sacks and which detracts somewhat from its appearance, but the Californians are shrewd enough to put up this especially treated frnit in 25 or 30 pound boxes with a faced surface and a nice lace paper around the border, and our suggestion is that the Committee Commit-tee on Prizes, if they can see their way to adopt it, that you use this $50.00 as a prize or prizes for hot only the best , samples of sulphur dried fruit, but also for the most nicely and attractively packed in 25 pound boxes, and we think this will have a good effect, because as above stated, we believe there could be an immense industry built up in southern south-ern Utah in this line of business. However How-ever as 'above stated, we do not bind your Committee absolutely to this plan if they can see something better. Our check for this amount is at your disposal when ever you wish to call for it. Yours truly. JohK Scowckoft, President. ABOUT THE COUNTY FAIR. County Fair Meeting. Advantage was taken of the number of people attending conference, who are interested in the County Fair, to call a meeting for the purposo of furthering the work and hearing reports from the several committees. Excellent reports re-ports were returned, showing that the work is being prosecuted with vigor, and that much interest is being taken to make it a success. The Secretary read some very encouraging en-couraging letters from Jirms in this State, and from Eastern hrms, wherein prizes are offered for displays. The principal of which are, one Steel-Beam Bradley Plow to be given by George A. Lowe for the best exhibit of some product of the soil. $25.00 cash to be given by 2 C. Mi I, for the best 20-lb box of Dixie raisins. $50.00 cash to be given by Scowcroft & Son for the best exhibit of sulphured fruit. Several other prizes are promised from State firms, and Eastern houses. Several people present offered prizes, in some cases the cash being handed in, as follows: William A. Bringhurst of Toquerville, $5.00 for the best essay on horticulture: Rio Virgin Mills, $25.00 for the best 1000-lbs of lint cotton; Washington Wash-ington Roller Mills, $10.00 for the best display of cereals; Mrs. Isaac C. Mac-farlane, Mac-farlane, $2.50 for the best display of needlework; James T. Ballard, $5.00 for the best specimen of penmanship by school pupil under 12 years old: James Andrus, $10.00 for best milch cows; Edward M. Brown, $5.00 for the best map of Washington county; George F Whitehead, $5.00 for the best display of cheese: E. Bunker, Jr., $5.00 for best map of locality by school pupils under 15 years old; Richard A. Morris, one stand of Italian bees for best essay on bee management; Francis L. Daggett, $5.00 for best 25-lb box of dried peaches; Richard Morris, $1.00 for best Hb of radish seeds, $1.0'0 for best 1-lb of turnip seeds, $1.00 for best i-lb carrot seeds-. $1.00 for best Hb onion seeds, $1.00 for best i-bushel of early peas, and $1.00 for best -bushel of late peas. Dear Sir: I received your letter let-ter cif the 8th inst., suggesting to us that we offer a special prize, or premium, prem-ium, for the best display of fresh or dried fruits, to be exhibited at your fair in September next. It affords me pleasure in 'saying that our Institution will O'ler the special cash prize of $25.00 for the best twenty pound box of home cured Dixey R,aisins. A vast quantity of raisins is used in this state, and with the facilities in Dixey, splendid climate and all other favorable conditions, I am satisfied with ettre and attention, the people of your section of the country could stop a great deal of the importation importa-tion of raisins. It is a lamentable fact that while we are selling' our Utah dried fruits for 4, 4i and 5c. a pound and shipping them out of the country, we are bringing in California Evaporated Evaporat-ed fruits and selling them here to our own people at 8, 9 and 10c. a pound. Such a condition of affairs is Very dis-asterous dis-asterous to the welfare of the Slatti; and I really trust that our people will wake up to the situation, and will produce an article of dried fruits that Will command com-mand the best price, not only in this market but in the east, as I know the quality of our fruit is superior to anything any-thing we get from the east or west.
