market always requires more or less of butter and cheese and the butter is generally supplied by local eis but the cheese is imported almost entirely at present an snort was made this summer to revive the cheese factory but there was not sut ici ent product in eight at the time to justify such action now it appeals to me that it the people of st george would make use of all the cows that they can reasonably teed there would be sufficient milk produced in the town to justify the operation of the cheese factory and the cream for making butter could be furnished by persons located further from the factory and where the haul would be too great to justify the transportation of milk this would require that each family raise all the alfalfa and corn possible and that too many mustang horses be not fed in too many cases a surplus of horses Is kept around and tho hay that would support a dairy cow is required to support each horse unless the family have real use for its horses wisdom would dictate that they be disposed of and cows kept la their place I 1 can not see how any family can justify itself in not keeping one or more cows in st earge ep rge and in tact in any place in the county the important place which milk takes in the diet and in the health of the family and especially of the children makes it something that every family should be provided with and that in abundance while milk has always been recognized as a most important food it has remained for the scientists of our own day to demonstrate its most vital importance in the growth and development of children and indeed in the health of all human beings farmers and dairymen especially should use an abundance of dairy products and thus help to keep up the market for their own products it farmers buy and use substitutes for butter and thus rob and their families of the rich ta mine content of true butter how can they blame the laborers in cities for buying these fraudulent substitutes and thus undermining the market for dairy products because the substitute is cheap and often looks and tastes like real butter the dairy cow can not compete with the cocoa nut cow in price but the butter and condensed milk made from pure ons milk has in it the life giving famines which are not present in any appreciable quantity in and 0 he butter or condensed milk aiutes fortunately the danger to public health and to child growth and development la the general use of butter and milk substitutes is be known but it should be impressed upon the mothers and era of children at every available op port unity the rosy cheeks and geri eral glow of health which characterizes the children whose diet con bains a generous supply of milk and milk products should be sufficient to convince any parent of the duty they owe to their children and to society to supply the children with plenty of dairy products the market for butterfat in salt lake city can always be relied on to take care of our local product when the local market will not use it all the people of this county can there fore go into dairying to any extent deemed advisable and still be sure of a market it the product shall be increased to
