Show ICE CREAM A BAROMETER OP ECONOMIC CONDITIONS Ice cream consumption fluctuates fluctu-ates in sympathy with general economic conditions. In the boom year of 1929 commercial ice cream manufacturers turned out more than 250,000,000 gallons. gal-lons. By 1933 production had shrunk to less than 150,000,000 gallons. By 19 3 4 it was back to nearly 180,000,000. Ice cream making is one of the industries that provides a market for dairy products, and as a result both the United States Department of Agriculture and the various State experiment stations sta-tions are interested in many phases phas-es of the business. There is considerable "literature" "litera-ture" on ice cream making available avail-able free or at small cost from these sources. The Federal Department De-partment has 10 printed and 7 mimeographed publications and recently listed nearly a hundred publications issued by State experiment ex-periment stations. These range from simple and practical directions direc-tions for making ice cream at home to research studies into chemical and bacteriological phases. phas-es.
