Show REGULATIONS COVERING THE SALE OF YEAST Local dealers have received the following fol-lowing letter from the state board of agriculture dairy and food commissioner commis-sioner regarding the sale of yeast, which is self-explanatory: May we call your attention to the fact, as a handler of any kind of yeast, that this is one food product that is very susceptible to contamination and we desire to inform you that all such yeast is sanitarily wrapped and that the one pound packages for baker trade must be used solely by them for such purposes. It is a violation of law if the package is broken and sold from pound packages. This practice must cease as we desire just as much sanitation exercised on the part of handlers as we require of manufacturers, manufac-turers, and desire both " to cooperate with us in this matter. Our inspectors have found in many cases that bakers or dealers buy pound packages of yeast and then place it on the counter and cut off an ounce or more for sale at retail. Yeast is handled hand-led in a sanitary manner in factories and is never touched by human hands because of its susceptibility to contamination. contam-ination. We desire that the public be protected from unsanitary handling of this product and if our inspectors find such conditions we will be under the necessity of filing complaint. The retail re-tail trade also should instruct their patrons to use said yeast without allowing al-lowing it to come in conact with bare hands or any other matter, but should immediately use it from the wrapper itself. |
