Wlhile we usuauy associate asso-ciate macorini and spaghetti spa-ghetti with Italy and noodles nood-les with Germany, the evidence evi-dence tends to show that 'honors belong to the Orient Or-ient probably to China, 'although the Japanese 'Claim that their rice paste is the oldest product of its kind. For the European and American types of paste a hard wheat known as durum or semolina, is used entirely or in part. The flour is moistened and thoroughly mixed by machinery, ma-chinery, after which it is kneaded and flattened under un-der pressure. The shape into which it is molded decides de-cides its name. There are more than 50 shapes, including in-cluding fish, animals, crescents, cres-cents, flowers, letters, shells and crowns, besides the commoner spaghetti of variou thicknesses and the tubular macaroni. Some of these are colored with eggs, spinach or beet juice. American products are less varied. In Italy the pastes are usually dried out doors 'but in America our factories factor-ies have heated drying rooms through which wash ed and filtered air is continually con-tinually blown. |
